- Wheat flour - 350 grams;
- Fresh milk - 150 grams;
- Granulated sugar - 2 tablespoons;
- Dry yeast - 1 teaspoon;
- Salt - half a teaspoon;
- Chicken egg - 2 pieces;
- Odorless vegetable oil - 2-3 tablespoons.
Filling:
- Ripe apples with a sweet and sour taste - 5-6 pieces;
- Granulated sugar - 2-3 tablespoons;
- Lemon juice - 1 tablespoon;
- Cinnamon - 2 teaspoons.
Preparation: First you need to knead the dough.To do this, pour the yeast into a cup and add five teaspoons of water. Do not stir and leave for ten minutes. Then stir the yeast in the water and add a little milk, flour and sugar to get a mixture the thickness of liquid sour cream. Leave this yeast mixture for half an hour until a foam cap appears on it. Now pour the sifted flour into a bowl, add sugar and salt and stir. Collect the flour in a mound, make a depression in it and add one raw egg. Pour in the milk and yeast mass and knead the dough. Leave it for about five minutes, and then add butter and knead the dough until elastic. Cover the bowl with the dough with a towel or cling film and leave it to rise for about an hour. The speed of dough rise depends on the quality of the yeast. Therefore, it may take more or less than an hour. You need to focus on the volume of the dough. When the volume has doubled, you can start making the pie. Knead the dough, gather it into a ball and place it on a floured table. Now roll it out into a layer the size of the pan in which you will bake the pie (taking into account the height of the sides of the pan). Turn on the oven and leave it to heat up to 180-200 degrees. Grease the baking pan with vegetable or butter and put the layer of dough in it, covering the walls of the pan. Cut off the excess dough. Cover the pan with the dough with cling film or a towel and leave for twenty minutes to rise. In the meantime, prepare the filling. Peel the apples and remove the hard core. Now cut them into thin slices and sprinkle with lemon juice. Roll out the trimmed dough into a layer and cut long thin strips no more than one centimeter wide. Place the apples in the pan with the dough, sprinkle them with cinnamon and sugar and cover with a grid of strips of dough. Fold the dough from the edges of the pan inwards, forming the edge of our apple pie. Grease the top of the pie with a raw beaten egg. Put the pan in the oven and bake the pie until golden brown. We offer you a recipe for a closed yeast pie with apples. The recipe is not very different from the previous one, but the filling is made differently. Ingredients:
- Fresh milk - one and a half glasses;
- Wheat flour - 600 grams;
- butter - 100 grams (half a pack);
- Granulated sugar - 3 tablespoons;
- Chicken egg - 2 pieces;
- Yeast - 10 grams;
- Salt - 1 teaspoon.
Filling:
- Fresh apples - 6 pieces;
- Starch - one and a half tablespoons;
- Granulated sugar - 1 tablespoon.
Preparation: First, we also knead the dough.Dissolve the yeast in warm water and leave it to rise. When a foam cap appears on it, pour the yeast into a bowl, add the egg, sugar, milk, salt and softened butter. Mix the resulting mass until smooth and gradually begin to add the sifted flour, kneading the dough. Cover it with a towel and leave it to rise for about an hour. Divide the finished dough in half - one part for the top of the pie, the other for the bottom. Roll each part of the dough into a layer. Now turn on the oven and leave it to heat up to 180-200 degrees. Take one layer of dough and place it on the bottom of a greased form or directly on a baking sheet. Sprinkle the dough with starch. Peel the apples and cut out the hard core. Now grate the apples on a coarse grater, mix with sugar and immediately spread on the dough in an even layer. Take the second layer of dough and cover the filling. Pinch the edges of both layers and tuck them under the bottom of the pie. Grease the top of the pie with a beaten egg and put it in the oven for about half an hour. Bake the pie for about thirty minutes. When our pie is golden brown, take it out of the oven and put it on the table. Grease the top of the pie with butter, sprinkle with water, cover with a towel and leave until completely cool.
