The fact is that beans are the leader in the content of vegetable protein, which, in fact, explains the nutritional value of dishes that include this legume – green bean salads, casseroles, soups, etc. We offer original recipes for green bean salads that can be prepared all year round – in season from fresh vegetables, in winter from frozen beans. Spicy salad with green beans
Ingredients:
- 300 grams of green beans
- 1 juicy onion
- 2-3 cloves of garlic
- hot chili pepper
- 3 tablespoons of olive oil
- 1-2 tablespoons of thick balsamic sauce
- salt, pepper to taste
Method of preparation:Wash the beans thoroughly, break off the hard ends and steam them. It is important not to overcook them – they should be slightly crispy. Immediately pour very cold water over the beans (this will help preserve the bright green color) and pour in the marinade. To do this, mix chopped garlic, salt, pepper with olive oil and balsamic sauce. Refrigerate for a couple of hours. Before serving, add finely chopped onion to the green bean salad and sprinkle with fried pine nuts (can be replaced with sunflower seeds or pumpkin seeds).

- 150 grams of bacon

- 500 grams of green beans
- 250 grams of small potatoes
- juicy bulb
- 150 grams of cherry tomatoes
- 150-200 grams of bacon
- 3-4 tablespoons of olive oil
- 2 tablespoons balsamic vinegar
- teaspoon Dijon mustard
- salt, pepper to taste
Method of preparation:Wash the beans, remove the hard ends and steam them, then plunge them into ice water for 5-10 minutes. Boil the potatoes and cool them. Place the beans, potatoes, halved cherry tomatoes in a salad bowl, add salt and pepper. Season with olive oil mixed with Dijon mustard and balsamic vinegar. Before serving, garnish the green bean salad with crispy bacon slices. Note: This green bean and potato salad can be the basis for various variations. - 2-3 cloves of garlic
- 100 grams of breadcrumbs, prepared from a good cracker
Method of preparation:Wash the green beans, steam them and pour ice water over them. Heat the olive oil in a frying pan and lightly fry the garlic. Add the butter, beans and cook everything together, stirring, for a minute or two. Sprinkle with breadcrumbs, add salt and pepper to taste and stir. Serve warm.
