If you think that stuffed pancakesare too prosaic and mundane, then we hasten to dissuade you of this! Of course, in our traditional Soviet and post-Soviet cuisine this dish has established itself as an everyday one. However, stuffed pancakes can quite successfully complement a festive menu or, at worst, a Sunday-guest menu. And if you cook pancakes with meat and mushrooms according to a recipe from some national cuisine, then, we assure you, your dish will be a success!
Traditional pancakes with meat and mushrooms
Ingredients:
- 2 cups of warm milk;
- 4 tablespoons of potato starch;
- 4 tablespoons of flour;
- 4 eggs;
- Half a teaspoon of salt;
- 1 tablespoon of sugar;
- 3 tablespoons vegetable oil.
For the filling:
- 300 grams of fresh mushrooms;
- 300 grams of boiled meat;
- 1 head of onions;
- Salt and black pepper.
Preparation:Mix all the dry ingredients for the dough, add the eggs and knead the dough, gradually pouring in the warm milk. Finally, add the vegetable oil and leave the dough in a warm place for about twenty minutes. After that, fry very thin, lacy pancakes. Before scooping up another portion of dough, be sure to stir it, because the starch settles to the bottom. When you are done with the pancakes, you can start preparing the filling. It is very easy to make. Grind the boiled meat, onion and fresh mushrooms in a meat grinder. Then put the mince in a frying pan, add salt, ground black pepper, a little water and vegetable oil. First, simmer the mince in a frying pan with the lid closed, and then open it and let the moisture evaporate. Stuff the pancakes, folding them into envelopes and filling them with the filling. Ready pancakes with meat and mushrooms can be fried again in an almost dry (with a minimum amount of oil) frying pan.
Foam of pancakes with meat and mushrooms
Ingredients:
- A tablespoon of sugar;
- A glass of flour;
- 1 bag of baking powder for dough;
- 1 egg;
- Half a teaspoon of soda;
- Kefir or milk until the desired consistency of the dough;
- Vegetable oil;
- 200 grams of fresh champignons.
For the filling:
- 200 grams of boiled beef;
- 200 grams of boiled pork;
- 1 head of onions;
- Vegetable oil;
- Salt and black pepper to your taste.
For decoration:
- Marinated mushrooms;
- Lettuce leaves;
- Fresh greenery.
Preparation:Mix the dough with flour, eggs, sugar, salt and milk. The dough should have the consistency of liquid sour cream. Wash the mushrooms, chop finely and fry in vegetable oil. When the frying has cooled, pour it into the dough together with the butter and add a packet of baking powder. Fry the pancakes. Now prepare the filling. Mince the boiled meat (beef and pork) together with the onion. Pour the vegetable oil into the frying pan, let it heat up and fry the mince, seasoning it with salt and pepper. Cut the finished pancakes in half. Take four halves and place them in a pancake "fence" - overlapping, with the straight cuts down and the semicircular ones up. As a result, we should get a ribbon of pancakes. Spread it with minced meat and roll it up. We got a short, thick stump. We make stumps from the rest of the pancakes in the same way. We put washed and dried lettuce leaves on the dish and place our pancake stumps on it. We decorate with marinated mushrooms and fresh herbs.
Ukrainian benderiki with chicken meat and mushrooms
Ingredients:
- A half cup of flour;
- 3 eggs;
- 2, 5 glasses of water;
- 2 tablespoons of vegetable oil;
- Black pepper and salt.
For the filling:
- 2 chicken breasts;
- Head of onions;
- 200 grams of fresh mushrooms;
- Half a glass of cream;
- Salt.
For the batter:
- 3 eggs;
- A quarter of a glass of water;
- A pinch of salt.
Preparation:First, you need to bake pancakes. To do this, pour the eggs into a bowl, mix with salt and sugar and beat. Add all the flour and knead the dough well. Then pour in half a glass of water, stir and, gradually adding the remaining water, make pancake dough. At the very end of kneading, add vegetable oil. Fry the pancakes as usual: in a hot frying pan on both sides. For the mince, first fry the washed and finely chopped mushrooms and throw them in a colander to drain the oil. Peel the onion, cut into quarters and put it in a food processor (blender), add salt and cream and grind it into a puree. Then put the raw chicken there and beat everything again into a homogeneous mass. Mix the chicken puree with the fried mushrooms. Form benderiki. Take a pancake, cut it in half. Spread one half with a thin layer of filling and fold it into a triangle. To do this, first fold one edge of the pancake to the center, and then wrap it with the free part of the spread pancake. Prepare the batter by beating eggs with salt and diluting with water. Dip each triangle on both sides and fry in a frying pan with vegetable oil.
Arabian pancakes "Kataeuf"
Ingredients:
- 1 cup of wheat flour;
- 2 tablespoons corn flour;
- 1 teaspoon baking powder for dough;
- A half cup of milk;
- Half a teaspoon of salt;
- Half a teaspoon of sugar.
For the filling:
- 100 grams of boiled veal;
- 100 grams of fresh mushrooms;
- 1 onion;
- A glass of boiled rice;
- Salt;
- Butter.
Preparation: The filling must be prepared in advance.To do this, fry finely chopped mushrooms in butter, separate the meat into fibers and chop the onion very finely. Mix all this with rice, add salt and other spices to taste. The filling is ready. Now knead the dough and prepare the Katayof pancakes. For the dough, mix both flours, baking powder, sugar and salt in a bowl. Then start pouring in warm milk in a thin stream, constantly stirring the dough so that no lumps form. Take a frying pan with a thick bottom (this is a must!), or even better, a cast iron one. Heat the frying pan, but do not let it get hot and grease it with oil. Pour one tablespoon of dough onto it, and do not touch the frying pan itself - the dough will spread on its own. Start watching. As soon as all the bubbles burst on the surface of the pancake and the dough becomes matte, remove the pancake from the frying pan. Place it with the fried side down, lift the edges of the pancake up and connect them on one side, pressing them with your fingers for a few seconds. You should get a kind of cone. When we bake all the pancakes, fill them with the prepared filling and put them on a plate. You can pour melted butter on top of the pancakes.
