  • 50 gr. starch
  • 400 gr. butter
  • 70 ml. milk
  • 200 ml. cold water
  • 10 gr. yeast (dry)
  • 4 tbsp. spoons of sugar
  • 1 teaspoon of salt

Filling:

  • 200 gr. hard cheese
  • 250 gr. bacon
  • 2 egg yolks

Method of preparation:The recipe for French croissants begins with mixing starch and flour. Then add yeast, salt, sugar and mix thoroughly. After that, add softened butter (350 g), milk, water to this mixture and knead the dough. If necessary, add a little more cold water to the dough. Cover the dough with a towel and leave for one hour to rise. After an hour, knead the dough so that all the bubbles go away, and then put it in the refrigerator for 2 hours. Place the cooled dough on a table sprinkled with flour and roll it out. You should get a layer 4-5 mm thick. Visually divide the layer into 3 parts, and then grease 2 of them with a small amount of butter. After that, roll the dough, folding the unspread part and the spread part on top. The result is a folded book of dough. Put the resulting mass in the refrigerator for 1 hour. Remove the chilled dough from the refrigerator and roll it out, sprinkling it generously with flour. Again, visually divide the dough into three equal parts, and then grease 2 of them with a small amount of butter. Then roll the dough, tucking in the unbuttered part and the buttered part on top. The result will be a folded book of dough. Put the resulting mass in the refrigerator for 1 hour. Repeat this procedure 3 times, but without butter. Grate the cheese, finely chop the bacon and lightly fry in a frying pan for several minutes. Remove the dough from the refrigerator and roll it out. Then cut a circle out of the dough and divide it into eight equal parts. Put a small amount of cheese and bacon on each piece of dough (triangle), and then roll it up. Leave the finished rolls for 2 hours, grease with beaten egg yolk and place on a baking sheet covered with parchment paper. Place the baking tray in the oven and bake until golden brown at 180 degrees. French croissants are ready. Enjoy!
