Beets are, of course, available in winter and summer.This is what makes it such a popular ingredient in soups, appetizers and vegetable salads. However, most often we eat beets boiled, baked or fried. There is no argument, even in this form it is extremely healthy. But raw beets are much healthier! Especially in the summer, when they are fresh from the garden, still very tender, juicy and crunchy. And since summer is in full swing, we suggest you prepare a salad from fresh beets.
Salad "Vitamin attack"
Agree that young root vegetables havea special, incomparable taste. And beets and carrots in the salad are just perfect. For such a light vitamin salad we will need the following ingredients:
- Young beets - 3 pieces;
- Crude carrot - 2 pieces;
- Garlic - 1 clove;
- Nuts of walnuts - 1 handful;
- Root of horseradish (grated) - half a teaspoon;
- Mayonnaise, salt and pepper are at your discretion.
Preparation:Wash and peel the beets and carrots thoroughly (you can simply scrape the skin off young root vegetables with a knife) and cut into very thin strips. The thinner the vegetable slices, the tastier the salad will be. However, it is better not to use a grater - the crispness will be lost, and the juice will drain. Put the vegetables in a salad bowl, add walnuts and squeeze out a clove of garlic. Grate fresh horseradish root on a fine grater and mix it with mayonnaise. Dress the salad with this mixture. Add salt and pepper to taste. Note: This salad can be made without walnuts - its taste will not suffer without them. Instead of fresh horseradish root, you can use ready-made grated horseradish, bought in a store or made in advance.
"Krasna devitsa" salad
Another version of a salad made from raw beets. But to make this salad more filling, we will add croutons and cheese. Ingredients:
- Young beets - 3 pieces;
- Young carrots - 2 pieces;
- Apple fresh - 2 pieces;
- Hard cheese - 200 g;
- Sukhariki - 50 g;
- Mayonnaise - for refueling.
Preparation:For this salad, we will grate the vegetables and apples, but do not forget to wash and peel them first. By the way, you can leave very young vegetables unpeeled, just wash them very well. We will also grate the cheese, and take ready-made croutons (rye or wheat with any flavor additive). Mix all the ingredients in a salad bowl and season with mayonnaise. We will not need salt for this salad, since the croutons and cheese are already quite salty. But if the salad seems too salty to you, then add some salt. The salad turns out very juicy and beautiful, and to prevent the croutons from getting soggy, prepare the salad immediately before the meal.
Salad "Spicy"
What makes it piquant is the unusual combination of products and the presence of blackcurrants and pomegranate seeds in the salad. Ingredients:
- Young beets - 1 piece;
- Onion - 1 piece;
- Garlic - 2 slices;
- Currant - 3 tablespoons;
- Garnet grains (without pits) - 5 tablespoons;
- Seeds are half a glass;
- Vegetable oil - 1 tablespoon;
- Salt (preferably sea) - to taste.
Preparation:Wash the beets, peel them and grate them on a coarse grater or cut them with a knife for Korean carrots. Cut the onion into half rings and puree the currants, then mix the onion with the currant puree and beets. Prepare the sauce. Grind the seeds in a blender, add garlic, vegetable oil and salt and grind everything again. Season the salad with the sauce and serve, sprinkled with pomegranate seeds. Note: For an effective salad design, it is better to use a culinary ring and place the pomegranate seeds around the salad and on top. By the way, you can replace the pomegranate with red currants.
