Beetroot, of course, is available in winter and summer. This is what makes it such a popular component of soups, snacks and vegetable salads. However, most often we eat beets cooked, baked or fried. No doubt, even in this form it is extremely useful. But the raw beetroot is much more useful! Especially in the summer, when she's just off the bed, still very tender, juicy and crunchy. And since the summer is in full swing, we suggest you prepare a salad of fresh beets.
Salad "Vitamin attack"
Agree that young roots havespecial, incomparable taste. And beets with carrots in a salad are combined just perfect. For such a light vitamin salad we need the following ingredients:
- Young beets - 3 pieces;
- Crude carrot - 2 pieces;
- Garlic - 1 clove;
- Nuts of walnuts - 1 handful;
- Root of horseradish (grated) - half a teaspoon;
- Mayonnaise, salt and pepper are at your discretion.
Preparation: Beets and carrots are thoroughly washed and peeled (from young roots it can be simply scraped with a knife) and cut into thin thin straws. The thinner the vegetable slicer, the more delicious the salad will be. However, it is better not to use a grater - the effect of crunchiness will be lost, and the juice will drain. We put the vegetables in a salad bowl, add walnuts to them and squeeze out a clove of garlic. Fresh root horseradish rubbed on a fine grater and mix it with mayonnaise. With this mixture, season the salad. Salt and pepper are put to taste. Note: This salad can also be prepared without walnuts - its taste will not be affected without them. Instead of fresh horseradish root, it is not forbidden to use ready-made shredded horseradish, purchased in the store or made in advance.
"Krasna devitsa" salad
Another version of salad from raw beets. But in this salad for the sake of richness, we will add breadcrumbs and cheese. Ingredients:
- Young beets - 3 pieces;
- Young carrots - 2 pieces;
- Apple fresh - 2 pieces;
- Hard cheese - 200 g;
- Sukhariki - 50 g;
- Mayonnaise - for refueling.
Preparation: For this salad vegetables and apples we will grate on the grater, though we will not forget to pre-wash and peel them. By the way, very young vegetables can not be cleaned, but just very good to wash. Cheese also grind with a grater, and crackers we take ready (rye or wheat with any flavor additive). All the ingredients are mixed in a salad bowl and dressed with mayonnaise. Salt for this salad will not be required, as the crunches and cheese are already quite salty. But if the salad seems to you saline, then salt it. Salad turns very juicy and beautiful, and so that the crackers are not soaked, prepare the salad directly before the meal.
Salad "Spicy"
Piquant it makes an unusual combination of foods and the presence of salad berries of black currants and pomegranate seeds. Ingredients:
- Young beets - 1 piece;
- Onion - 1 piece;
- Garlic - 2 slices;
- Currant - 3 tablespoons;
- Garnet grains (without pits) - 5 tablespoons;
- Seeds are half a glass;
- Vegetable oil - 1 tablespoon;
- Salt (preferably sea) - to taste.
Preparation: My beets, we clean and rub on a large grater or cut with a knife for a Korean carrot. We cut the onions into semicircles, and chop the currant in puree, after which we mix the onion with currant puree and beetroot. Prepare the sauce. Seeds shredded in a blender, add garlic, vegetable oil and salt to it and again grind everything. We dress the salad with sauce and serve, sprinkling with pomegranate seeds. Note: For effective salad dressing, it is better to use a culinary ring, and grains of pomegranate should be laid around the salad and on top.
