Traditional pie with sour cream and cottage cheese.It is made from butter sponge cake and cottage cheese and sour cream filling. After the pie cools down, the filling becomes like a delicate soufflé. Believe me, it is very tasty! Ingredients:
- 400 grams of flour;
- 600 grams of cottage cheese;
- 250 grams of granulated sugar;
- 1 glass of sour cream 30% fat;
- 3 eggs;
- 2 teaspoons baking powder;
- 150 grams of butter;
- 50 grams of starch;
- 2 teaspoons of vanilla sugar.
Preparation:Let the butter melt a little so that it becomes soft. Now put the butter in a bowl, pour in half a glass of granulated sugar and grind the butter and sugar until white. Next, break two eggs into the same bowl, mix, pour in the sifted flour with baking powder and knead the dough. Put the dough in a greased and floured form with detachable sides, smooth it along the bottom and form the sides. For the filling, rub the cottage cheese through a sieve and put it in a bowl. Add one egg, starch to the cottage cheese and mix everything well. Beat the sour cream with granulated sugar and vanilla sugar in a separate bowl until fluffy, and then combine it with the cottage cheese. After that, spread the prepared filling in an even layer into the form with the dough and send the pie into the oven preheated to 180 degrees. Bake the pie for about 45 minutes. Let the finished pie cool completely right in the form, and then take it out and put it on a plate. You can serve the pie whole, or you can cut it into portions in the form of triangular cakes.
Royal Cheesecake
Another fairly well-known recipe for cottage cheesepie. In essence, such a pie is really a cheesecake, but in terms of the cooking principle and appearance it is more like a cake. Apparently, this is why this pie was called the royal cheesecake. Ingredients:
- 2 cups of flour;
- 1 tablespoon of granulated sugar;
- 250 grams of creamy margarine or butter;
- Half a teaspoon of baking soda;
- 1 packet of vanilla sugar;
- 1 pinch of salt.
For the filling:
- A pound of granular cottage cheese;
- Half a glass of sour cream;
- 2 eggs;
- 1 cup of sugar;
- 1 packet of vanilla sugar.
Preparation:Grate the well-chilled margarine on a coarse grater and put it in a bowl. Add granulated sugar, vanilla sugar, sifted flour and baking soda with salt and knead a fairly stiff dough. Put the dough in the refrigerator, and in the meantime prepare the filling and baking pan. By the way, you can also turn on the oven in advance. It is better to take a detachable pan and grease it with margarine and sprinkle with flour. Then the pie will be much easier to remove from the pan. For the filling, we only need to combine the cottage cheese with sour cream, sugar and eggs, add vanilla sugar and knead a homogeneous mass. Moreover, there is no need to rub the cottage cheese - let it remain grainy. Now take out the dough and divide it into two parts. Grate one part on a coarse grater and pour the dough into the pan. Level it and put all the filling on top in an even layer. Grate the second part of the dough and sprinkle it evenly over the filling. Place the mold in the oven and bake the cheesecake until golden brown. Let the finished pie cool right in the mold, then remove it from it and transfer it to a plate.
Apple pie with cottage cheese and sour cream
Quite an interesting recipe for a cottage cheese and sour cream pie. A sort of mix of a royal cheesecake and a charlotte. Very tasty and original pastry. Ingredients:
- 2 cups of flour;
- 125 grams of margarine;
- 2 eggs;
- 3 apples;
- 100 grams of sour cream;
- 200 grams of cottage cheese;
- One and a half cup of granulated sugar;
- 1 packet of baking powder;
- A teaspoon of cinnamon.
Preparation:Sift flour into a bowl, add softened margarine, half a glass of granulated sugar and baking powder and chop it all into crumbs. The dough is ready. Now let's make the filling. Wash the apples, remove the hard core with seeds and cut the pulp into small pieces. Beat the eggs with the remaining sugar, then mix them with cottage cheese and sour cream. Add chopped apples and cinnamon to the filling and mix everything again. Cover the baking pan with baking paper, turn on and heat the oven to 180 degrees. Pour half of the dough into the pan in an even layer, put a layer of filling on top, and sprinkle the remaining dough on top. Bake the pie for about forty-five minutes. A very simple recipe for a light sour cream pie with cottage cheese and fresh berries. Especially relevant during the raspberry season. The pie turns out juicy and magically aromatic. Ingredients:
- 250 grams of cottage cheese:
- 200 grams of sour cream;
- 200 grams of flour;
- 200 grams of fresh raspberries;
- Half a glass of sugar;
- 5 tablespoons of milk;
- 5 tablespoons of butter;
- 2 eggs;
- 1 bag of baking powder;
- Pinch of vanillin.
Preparation:Place half of the cottage cheese in a bowl, combine it with milk and softened butter and knead. Then pour in half of the sugar and mix well. Now add the sifted flour and baking powder and knead the dough. Prepare the pan by greasing it with butter and sprinkling it with flour, and place the dough in it. Turn on the oven and adjust the temperature to 200 degrees. Next, you need to prepare the filling. - 1 cup of flour;
- 100 grams of creamy margarine;
- 100 grams of granulated sugar;
- 2 tablespoons of cocoa powder;
- 1 egg;
- 1 packet of baking powder.
For the filling:
- 200 grams of sour cream:
- 150 grams of granulated sugar;
- 400 grams of cottage cheese;
- 2 eggs;
- 3 tablespoons of potato starch;
- 1 packet of vanilla sugar.
Preparation:Grind margarine with granulated sugar until white, add eggs and mix or beat lightly. Combine flour with cocoa powder and baking powder and sift. Add flour to the butter-egg mixture and knead smooth dough. Roll it into a ball and separate a quarter. Place the remaining dough in a greased and floured form and distribute it along the bottom and walls of the form. The sides of the dough should be high - five to seven centimeters. Put the form and the set aside dough in the refrigerator for half an hour, and in the meantime prepare the filling. Place cottage cheese, sugar, sour cream, starch, eggs and vanilla sugar in a bowl and beat everything until fluffy using a mixer or blender. Take the form out of the refrigerator and pour the filling into it. Make sure that the filling does not reach the edge of the sides of the dough by about two centimeters. Divide the dough into 16 pieces. Form nine pieces into flat, irregularly shaped cakes that should resemble the spots on a giraffe's skin. Roll the remaining pieces into strands, make them flat and lay them out around the curd layer. Place the pie pan in an oven preheated to 180 degrees and bake for about an hour. Cool the finished pie in the pan and then transfer it to a plate.
Cottage cheese pie in pita bread
This is probably the simplest recipe for a pie with sour cream and cottage cheese. To prepare it, we will need the following ingredients:
- 2 sheets of thin lavash;
- 200 grams of sour cream;
- 750 grams of soft cottage cheese;
- 150 grams of granulated sugar;
- 1 tablespoon of cocoa powder;
- 3 eggs;
- A handful of brass;
- 2 tablespoons of flour.
Preparation:Set aside 2 tablespoons of sour cream to grease our pie, and pour the rest of the sour cream into a bowl. Add cottage cheese, eggs, sugar, flour and beat everything until smooth. Divide the filling into two parts and mix one with cocoa powder, and the second with raisins. Grease the baking pan with butter and place a sheet of lavash in it so that its edges hang over the edge of the pan. Put half of the filling with raisins and cover with a second sheet of lavash, which we pre-cut to the size of the pan. Put all the chocolate filling on it, which we also cover with the cut lavash. The last layer is the filling with raisins. We cover this layer with the free edges of the bottom lavash and grease it with sour cream on top. Turn on the oven and let it heat up to 200 degrees. Cover the pan with foil, which should not touch the top layer of the pie, and put the pan in the oven for forty minutes. Then remove the foil, reduce the temperature to 150-180 degrees and bake the pie for another twenty minutes. Take the pie out of the pan only after it has completely cooled down. As you may have noticed, all these pies should be taken out of the pan only after they have cooled down. The thing is that the hot curd filling is liquid. And if you start taking out a hot pie, it will break and the filling will flow out of the pie. But you can take a cooled pie out of the pan without much difficulty and without damaging the pie.
