- Mix the dough
Pour cool water into the prepared bowlfiltered or boiled water. Break the eggs into another bowl and whisk them. Then add the beaten eggs, sifted flour, sugar and salt to the water. Now you need to beat the pancake batter with a mixer to avoid the formation of flour lumps. If you do not have a mixer, you can make the batter by hand. This is done as follows: pour the flour into a bowl, break the eggs into the flour, add salt and sugar, and then gradually pour water into the bowl, constantly stirring the batter with a whisk to avoid the formation of flour lumps. After you have kneaded the dough (with a mixer or a whisk), you need to add vegetable oil and stir. The consistency of the finished dough resembles liquid sour cream, if it turns out thicker, dilute it with water until you get the desired consistency.
- Fry pancakes
For frying pancakes it is better to use cast ironfrying pan. First, it needs to be heated very well over medium heat. Grease the heated frying pan with oil (you can also use a piece of lard). After that, scoop up some dough with a ladle (about ¾ of the ladle) and pour it evenly onto the heated frying pan. Each pancake needs to be fried on both sides for about 2 minutes.
