Dissolve two tablespoons of granulated sugar, salt and vanilla sugar in milk with yeast, break raw eggs into it, and pour in vegetable and butter. Now mix everything very well and add sifted wheat flour, making a dough of the consistency of liquid sour cream (like pancake dough). Put the dough in a warm place and leave it to rise. When the dough rises and then begins to settle like a funnel, knead the dough. To do this, mix the dough and gradually add sifted flour, kneading a soft, elastic and thick dough that can be rolled out with a rolling pin. Knead the dough very thoroughly, and then cover it with a clean towel and leave it to rise again. When the dough rises and increases in volume three times, knead it, gather it into a ball and put it on a table sprinkled with flour. If necessary, mix flour into the dough to make it easier to roll out. Now, using a rolling pin, roll the dough into a layer five to seven millimeters thick and put it in a greased baking pan, covering the bottom and sides. Cut off the dough that goes beyond the sides of the pan and roll it into a ball. Leave the dough in the pan to rise - it should become a little fluffier. In the meantime, turn on the oven, which should heat up to 180-200 degrees and prepare the filling and decoration for the pie. Wash the apples, peel them and remove the hard middle with seeds. Then cut the apples into thin slices and put them in a layer on the bottom of the pan with the dough. Sprinkle the apples with the remaining granulated sugar. From the dough that remains after trimming, we form long narrow flagella or roll it out into a thin layer and cut into narrow strips. From the flagella (strips) of dough, we lay out a diagonal lattice on top of the filling, and we wrap the dough from the sides of the form onto the pie, forming an even, beautiful edge. Grease the top of the pie with egg yolk and send the form to the oven, where we bake the pie until a golden brown crust forms. We take the finished pie out of the oven, remove it from the form and sprinkle it with water. Then we cover it with a clean towel and leave it to cool.
Classic charlotte with apples

Pour the biscuit dough into the apple pan and bake the charlotte until a dry toothpick comes out clean (about forty minutes). Turn the finished pie over onto a plate so that its bottom becomes the top of the charlotte. When the biscuit has cooled, sprinkle it with a mixture of powdered sugar and cinnamon.

- 6-7 fresh apples;
- 1 packet of vanilla sugar;
- 1 teaspoon baking powder for dough;
- 5 tablespoons of cognac or rum.
Preparation:First, prepare the filling (the day before baking the pie). Place peeled and thinly sliced apples in a saucepan, add washed raisins, cognac (rum) and four tablespoons of sugar. Mix, cover the saucepan with a lid and leave to soak. Stir the filling periodically. The next day, you can start making the pie. Sift the flour into a bowl and mix it with vanilla sugar and baking powder. Add three quarters of the butter required by the recipe and two tablespoons of sugar.
