Fish cake

Ingredients: For the dough:

  • 3 cups flour (about 500 g)
  • 1 cup of milk
  • 0.5 cups of vegetable oil or
  • 100 g of butter or margarine
  • 1 tbsp. Sahara
  • 1 tsp salt
  • Yeast, fresh - 20 g

For the filling:

  • Rice cooked until half cooked - 1 glass
  • Fish boiled - 300-400 g
  • Egg boiled -2-3 pieces.
  • Onions - 1 pc.

Preparation:Boil the ingredients for the filling in advance. Finely chop the eggs. Take the fish apart, carefully remove all the bones. Boil the rice until half-cooked. Chop the onion and fry in vegetable oil until golden brown. The second option is to finely chop, scald with boiling water and marinate for 5-10 minutes in vinegar or lemon juice. Knead the dough. To do this, heat the milk to 35-40C. Crush the yeast with a spoon, add sugar, pour in the milk and stir. Give them a few minutes to activate. During this time, sift the flour into a deep bowl, and if you are using margarine or butter, melt it and cool it. Pour the active yeast into the flour and start kneading the dough. Add butter. The dough should be quite dense, but elastic. If necessary, you can add a little flour. The kneading process of the dough should take at least 15 minutes. This is what will make the initially sticky dough smooth, elastic, and a little damp. Place the finished dough in a warm place for 30-40 minutes. When it has doubled in size, knead it and let it rise again. Divide the risen dough into two unequal parts. Roll out the larger piece into a rectangle and place it in a baking pan with sides. Place the filling on the dough: first rice, then fish, onion, and eggs. Roll out the second part of the dough and cover the pie with it. Preheat the oven to 180C. Bake the pie until done, about 40 minutes. To get a golden crust, you can brush the top of the pie with milk or beaten yolk (before putting it in the oven).

Cake with meat filling

You can make several pies with filling at once - use a universal dough as a base and prepare different fillings. Ingredients:

  • Minced meat (better mix of pork + beef) - 300 g
  • Onion - 1 pc.
  • Mushrooms champignons - 200 g
  • Breadcrumbs - 5 tbsp.
  • Milk or kefir - 2 tbsp.
  • Yeast dough - 700 g

Preparation:Knead the dough according to the recipe above. Prepare the filling. Finely chop the onion and fry in oil, add the minced meat to the onion and mix it thoroughly so that there are no lumps. Simmer until done. Rinse the champignons and cut into slices. Fry for a few minutes in a separate bowl. Roll out an oblong flatbread 2 cm thick from the dough. Sprinkle with breadcrumbs. Put the prepared minced meat, pre-mixed with kefir (it will help retain the meat juice), in the middle, distribute almost along the entire length of the flatbread. Put a layer of mushrooms on top of the minced meat. Sprinkle with breadcrumbs. Lift the long edges of the flatbread and connect them on top, pinch. Lift and pinch both ends of the resulting loaf to completely hide the filling. Cover the finished pie with a towel and leave to rise for about 20 minutes. Preheat the oven to 180C. Bake the pie for about 35-40 minutes, until golden brown.pies with stuffing

Apple pie

Ingredients:

  • 300 g of wheat flour
  • 2 tablespoons Sahara
  • 1 egg
  • 100 g of butter
  • A pinch of salt
  • 4-5 large sweet and sour apples or apple jam (jam)
  • 2-3 tablespoons Sahara
  • 1 tsp cinnamon
  • 0.5 tsp ground cardamom

Preparation: Prepare shortcrust pastry.Rub cold butter with sugar, salt and flour until fine crumbs form. Beat in an egg and mix everything. If the dough is too stiff, add a few spoons of cold water. Roll the dough into a ball and put it in the refrigerator for half an hour. During this time, prepare the filling. Wash the apples, cut in half and remove the core. Cut into thin slices. Sprinkle with lemon juice to prevent darkening. Mix sugar with cinnamon and cardamom. Grease a 22-23 cm diameter form with butter, sprinkle with flour, semolina or breadcrumbs, put in ¾ of the dough. Smooth out, form the sides. Place the apple slices on the dough in an even layer. Sprinkle with the sugar mixture. Grate the remaining dough on a coarse grater over the filling. You need to grate directly above the form with the pie. Preheat the oven to 180C. Bake the pie for about 30 minutes, until the filling is ready and the top layer is golden. Lemon pie

You can also make lemon pie with the same dough.pie. Lemon filling – sounds a bit unexpected, doesn’t it? However, it’s a very successful combination: sweet dough and sweet and sour spicy filling. How to make lemon filling Ingredients:

  • 3 lemons
  • 200 g of sugar

Preparation: Wash lemons in hot water.Cut into slices (with the peel if possible) and remove the seeds. Mix with sugar. Next, chop the lemons (with a blender or through a meat grinder). Pour the finished filling onto the dough, distributed over a greased form with sides. Bake in a hot oven until done. Baking pies with filling is a vast field for experiments. Do not restrain your imagination: berries, fruits, cheese, cottage cheese, mushrooms ... Everything that is in the refrigerator can, after thinking about it, be used as a filling.
