Cake "Family Napoleon" with nuts
Napoleon cake is often made without nuts. But we will deviate a little from the classic canons. We suggest preparing a delicious dessert that every member of your family will be delighted with! Ingredients: For the dough:
- three glasses of sifted flour of the highest grade
- fresh margarine - 250 grams
- ¾ cup cold water
- half a small spoonful of soda (extinguish it)
- some add a little salt - act on your own
For the cream:
- three packs of not very fatty cream (10% fit)
- 250 grams of fresh butter
- one standard glass of sugar
- 1.5 table spoons of starch
- a glass of crushed walnuts (or other)
- flour - one spoon (dining room)
Method of preparation:Preparing the dough for this cake is very simple. To do this, first sift the flour, add one package of margarine cut into small cubes (many use butter), which you should take out of the refrigerator in advance so that it chops well. Mix everything until fine crumbs. Then pour in cold water and soda slaked with vinegar. Some housewives add a little table salt to taste, so act at your own discretion. Knead the dough with your hands diligently, cover with gauze or a towel and put in the refrigerator (one hour is enough). In the meantime, you should prepare the delicious custard. Pour two packages of medium-fat cream into a small saucepan, add a cup of sugar (about 250 grams) and, stirring regularly, bring to a boil. While the mixture is cooking, mix one or one and a half tablespoons of flour with starch, add 200 milliliters of cream here. Stir well to get rid of lumps and combine the mixture with sweet milk standing on the stove. Add it gradually, pouring in a very thin stream, stirring constantly, otherwise clots will form. The cream should be quite thick; cool it. After it has cooled a little, add a little (first ¼, then the rest) crushed butter. Beat with a mixer, or if you don’t have one, you can use a special whisk. The next step is to prepare the cakes. Take the dough out of the refrigerator and divide it into about six or seven pieces, rolling each of them into a thin circle (some people make a rectangular cake). Place one piece at a time on an ungreased baking sheet. Make punctures in several places with a fork and put it in the oven, the appropriate temperature of the latter is 200 degrees. The product will become ruddy and golden in about four minutes. Bake all the cakes in this way, and use the one that doesn't work out (burns or, say, breaks) for sprinkling (grind it through a meat grinder or with a rolling pin). Now crush the previously peeled walnuts and, greasing each crispy cake with aromatic cream, sprinkle on top. In this way, form the Napoleon cake and decorate it with dough shavings. The dessert is ready, you can call everyone to the table! Have a nice time!
"Delicate Napoleon" with fragrant cream
Want to bake a cake but have never done it before? Then this recipe is definitely for you. Firstly, to prepare such a product, you don’t need any special skills or culinary superpowers. The main thing is that the products are fresh, the desire is huge, and the mood is excellent. If guests are approaching, and there is nothing to go with tea, then it’s time to start cooking! Ingredients: Dough:
- chicken egg - one piece
- 400 grams (or two packets) of fresh margarine
- 250 milliliters of warm pasteurized milk
- 4.5 cups of white flour from hard wheat varieties
- rock salt - add to taste
Cream:
- 500 grams of quality butter
- three ordinary glasses of low-fat milk
- sugar - 2.5 cups
- four chicken (medium) eggs
- flour - three dining rooms (without top) spoons
Method of preparation:To make the margarine chop well, take it out of the refrigerator and let it melt a little, then chop it in a deep bowl with a knife and mix with sifted premium flour. If desired, you can replace it with butter. In a separate bowl, combine a glass of non-cold store-bought milk, a pinch or two of rock salt, break one egg into it, then mix well with a whisk and add to the previous ingredients. Now knead the dough, first with a spoon, then with your hands, and divide it into several parts - from the above ingredients there should be ten to thirteen of them. Leave them at room temperature "to rest" for 30 minutes, then roll them out with a rolling pin into thin round (or other shape) cakes and put them in an already preheated oven. The optimal temperature is 190-200 degrees. You need to cook the products until they acquire a ruddy-golden color. This dough is very delicate, so the cakes are fragile and quite brittle. Carefully take them out of the oven, and use the worst one for decoration - crumble it well with your hands, or better yet, with a mortar. There are housewives who use a meat grinder for this. There are not only many different Napoleon recipes, but also various creams for it. We offer you the simplest one, but you can safely experiment with others. Beat eggs with sugar until thick white foam, then add three tablespoons (tablespoons) of wheat flour and one pasteurized milk (by the way, preheated). Mix everything thoroughly and pour in the rest of the dairy product, then cook on very low heat, without distraction and constantly stirring until small bubbles appear. When the cream becomes moderately thick, remove it from the stove and let it cool. In order not to spoil the mixture, be careful not to overcook it, otherwise the egg will “curdle” and you will have to start all over again. When the cream has cooled down a little, cut 1/2 kilogram of fresh butter into medium pieces and rub it thoroughly with the cream. Want to give it an unusual aroma? Then use vanillin or vanilla sugar. Some people like the cake to be very sweet, while others, on the contrary, prefer less cloying desserts. Therefore, if the cream seems too sweet or fatty to you, reduce the amount of the corresponding ingredients by half. Grease each cake with custard, form the cake, cutting off the edges and all the excess, and sprinkle with shavings on top. So that it is well soaked, put it in the refrigerator for five to six hours. Making such a cake is a pleasure! After all, you do not need to wait long for the dough to rise, besides, it is unpretentious and always turns out. And you can use different cream, there are a lot of recipes: with condensed milk, with milk and others. We hope that now "Napoleon" will become a frequent guest in your home!
Napoleon with honey and nuts
For those with a real sweet tooth, we offer a recipedelicious cake with honey. It turns out very tender - you won't have time to put one piece in your mouth, as it will already melt! Try it! The above products will make a rather large "Napoleon", so if you are going to have tea in a small family circle, reduce the amount of ingredients by about two or three times. Ingredients: For the dough:
- fresh butter - 300 grams
- good margarine - 200 grams
- six eggs
- ½ cup of sugar (you can use a substitute)
- three small spoons (without top) of soda
- 500 grams of golden honey
- eight tablespoons (without a slide) of flour spoons
For the cream:
- three liters of low-fat sour cream (suitable even 1%)
- one large spoonful of boiling water
- sugar for your taste
- half a cup of walnuts
- one dining room (without top) a spoon of coffee (take soluble)
Method of preparation: Start preparing the dough:To do this, melt the aromatic honey and margarine, soda (no need to extinguish) in a deep bowl over low heat and stir everything with a whisk right on the stove. Beat the chicken eggs in a bowl and slowly pour them in, gradually pour in the amount of sugar specified in the recipe. Mix thoroughly and add wheat flour (only premium grade) which do not forget to sift beforehand - this way the dough will be airy. Stir the mixture with a spatula, and when the mass becomes moderately tight, continue kneading with your hands. Then divide into several portions (we got about twenty) - these will be your cakes. It is believed that before rolling them out, you need to let the base sit (in the refrigerator for 60 minutes). But if you are in a hurry, turn them with a rolling pin (on a work surface sprinkled with flour) into thin round cakes. Place parchment or special paper on a baking sheet, then each cake layer one by one. Bake in the oven until golden brown, setting the temperature to 200 degrees. Do not throw away the remaining dough and trimmings: put them in the oven last, then chop them with a knife or crumble them with a blender - this will be the topping for your cake. Now it's time to prepare the aromatic cream. Dissolve coffee in hot water (boiling water). Beat sour cream and sugar with a mixer until thick, then add the previous ingredients to this mixture and mix again. Place one cake layer on a beautiful large plate, then spread it with a thick layer of cream, put the next cake on top. Continue in the same spirit, this way you will get a cake. Apply the remaining cream to the sides with a special spatula. Grind walnuts (you can use other nuts), combine them with shavings from the failed cake and sprinkle the product on all sides. To make the Napoleon juicy, put it in the refrigerator in the evening, and in the morning you can serve it with hot tea. Agree, this is a great start to the day!
Cake "Honey"
Let's consider another very sweet option"Napoleon" with honey. Try both recipes in your kitchen and choose the best one. It is preferable to serve this cake with tea or coffee without sugar. Ingredients: Cakes:
- four medium eggs
- 600 grams of wheat (necessarily sifted) flour
- four large spoons of honey
- Butter - 150 grams
- a cup of sugar
- slaked soda - one and a half teaspoons
For the cream:
- one small lemon
- one and a half glasses of sugar or powdered sugar
- one liter of very thick sour cream
Method of preparation:To make a delicate dough, be sure to first sift the flour. Then dissolve the sugar, butter and honey specified in the recipe in a water bath, then cool a little. In another bowl, beat the chicken eggs with a fork and add them to the previous products. Also add the soda quenched with vinegar, the required amount of flour - mix everything very thoroughly so that there are no lumps, and knead the dough. Divide it into ten small balls and put in the freezer. To make a fragrant cream, beat a liter of sour cream and sugar with a mixer (you can use a blender). It is best, of course, to take powdered sugar. It dissolves well, so you will not have to fight with lumps. Also add a small lemon, grated on a grater. You can make such a cream in just a couple of minutes, but if you have enough time, master the custard, which is also suitable for both cakes and eclairs. Well, do you want to try? Then you will need: a liter of store-bought milk, two eggs, a glass of sugar, butter (package) and three large spoons of flour. First, combine the chicken eggs, sugar and the above-mentioned amount of flour in a bowl. Then stir with a spoon until smooth. Slightly warm the low-fat milk over low heat and gradually add it to the finished mixture, do not forget to stir. Now put the dishes on the stove and bring to a boil, then cool to room temperature. Chop the butter into small pieces and add it to the milk mass, then stir with a whisk until smooth. We have offered you two cream recipes to choose from. Which one to choose is up to you. We, in turn, can only guarantee one thing - the cake will turn out a masterpiece in both cases. So, when you prepare the cream, immediately take the dough out of the freezer and roll each ball into a thin circle. To make the correct shape, we used a large plate. Place the cake on a baking sheet, prick it in three places with a fork and put it in the oven. Set the oven to 200 degrees. Then grease the "floors" of the future cake with a delicate cream prepared to your taste, sprinkle with nuts or shavings from the remaining dough if desired.

Pour in the entire packet of vanillin (if you do not like the spice, take a little less), and when the mass has cooled slightly - small pieces of butter, then cool the resulting mixture. Grease each cake in turn with the prepared warm cream, process it on the sides, sprinkle with shavings. Some use crushed nuts or chocolate for this. The latter can either melt in a double boiler or grate on a fine grater. After the cake is well soaked, proceed to the meal.
