We only recently tried olives.We have tried them, but we still haven’t figured out what to do with them. That’s why we eat them in their natural form (canned, of course), or decorate various dishes with olives. At best, we put them in pizza or solyanka. True, we also add olives or black olives (whatever you call them) to some salads, but for some reason we rarely treat ourselves to olive salads. The most famous salad with olives for us is Greek. By the way, calling the same fruit olives and black olives is accepted only in Russia. For some reason, we call green fruits olives, and black olives. In fact, both are olives. Only green olives are unripe fruits of the olive tree (olives), and ripe olives turn black. True, some unscrupulous producers manage to make green olives black too. But let it remain on their conscience, and we will still try to treat ourselves to olive salads. You have to start sometime!
Greek salad
Let's start with culinary classics.Greek salad is very, very similar to our traditional summer vegetable salad with cucumbers and tomatoes. However, olives and soft Feta cheese make it special. This cheese is freely sold in our stores and is even labeled as "cheese for Greek salad". There are also substitutes for the original Feta, which can also be used for Greek salad. For example, Sirtaki cheese or even Feta analogues of domestic production. However, the latter are usually not cheese, but a cheese product. Ingredients:
- Tomatoes - 1-2 pieces;
- Cucumbers - 1-2 pieces;
- Sweet pepper (yellow or green) - 1 pod;
- Onion red or white - 1 onion;
- Olives black (olives) pitted - 1 small pot;
- Feta cheese - 100 g (approximately);
- Olive oil (can be mustard or fragrant sunflower) - 2 tablespoons;
- Oregano (dry seasoning) - 2-3 pinch.
Preparation:The recipe for this salad even in Greece itself exists in different versions. So the proposed composition is one of the possible ones. The undeniable advantages of such a salad are the absence of mayonnaise and the need for preliminary preparation of ingredients (boiling vegetables). So, wash the vegetables, peel the onion, and remove the seeds from the pepper. Cut the cucumbers, tomatoes and peppers into cubes, and the onion into rings. By the way, you can cut the tomatoes into thin slices, the cucumber into semicircles, and the pepper into strips. Now you can “assemble” the salad. Some do not mix this salad at all, and some first mix all the vegetables, season them, and then add the remaining ingredients. Both options are acceptable, but in each of them the salad is served in portions. Try the first option (like in a restaurant!), when the salad is placed on a plate in layers. First, put the sliced cucumbers and lightly salt them, without mixing. Place the tomatoes on the cucumbers, which are also seasoned with salt, pour over with oil (very little) and sprinkle with oregano. Then add pepper and some more salt and oil. Assemble the salad into a mound and put onion rings on it. Place whole olives on top of the onion, and finally (the last chord) – cheese cubes. You can serve. By the way, keep in mind that Feta cheese is very, very soft and fatty. It “floats” a little in the salad, which is why Greek salad is not stirred. As an option for dressing, you can make vinaigrette sauce, for which you need to mix oil with vinegar, oregano and salt. This dressing is simply poured over each layer of the salad, without adding salt.
"Man's Tears" salad
The name of this olive salad is quiteambiguous. Either the salad water alone causes men's tears (why?), or you have to make the man cut the onion for this salad. Then tears are guaranteed! Ingredients:
- Beef or chicken liver;
- Salted or pickled cucumber;
- Olives are green or black pitted;
- Onions or green onions;
- Dill greens;
- Mayonnaise, salt and pepper for seasoning.
Preparation:Take all ingredients (except seasoning) in equal quantities. Cut raw liver into strips and fry in vegetable oil. Throw it into a colander and leave to cool. Fry the onion cut into half rings and put it in a colander with the liver. Meanwhile, cut cucumbers into strips and olives into rings, finely chop the greens. Mix all ingredients, add salt, mayonnaise and pepper to taste and mix the salad again.
"Macaroni" salad
A very unusual salad for our cuisine. We usually prefer pasta as a side dish, but here pasta is added to an olive salad. Let's try it? Ingredients:
- Black olives - 250 g;
- Green olives - 50 g;
- Macaroni (spiral or tubules) - 400 g;
- Anchovies - 8 fish;
- Cress salad - 1 bunch;
- Cherry tomatoes - 5-6 pieces.
For filling:
- Vinegar is apple or wine;
- Olive oil or sunflower oil;
- Sugar;
- Garlic;
- Salt;
- Pepper.
Preparation:Boil the pasta in salted water, rinse and cool. Cut the anchovy fillets into small pieces, cut the tomatoes in half, and tear off the leaves from the watercress. Place all the chopped ingredients in a salad bowl, add the boiled and cooled pasta and olives. Season with sauce. Prepare the sauce for this olive salad as follows. Mix one part vinegar and two parts oil, add chopped garlic, pepper, sugar and salt and shake well.
Salad with olives and cheese
A very tasty salad with olives, cheese and rice. Also prepared without mayonnaise. Ingredients:
- Green olives - 15 pieces;
- Cheese - 100 g;
- Apple - 1 piece;
- Rice (long) - half a glass;
- Onion-turnip - 1 head;
For filling:
- Sour cream - 4 tablespoons;
- Wine or apple cider vinegar - 1 tablespoon;
- Salt - to your taste.
Preparation: First, cook the crumbly rice.If you don't know how to do this, then take rice in cooking bags. Then you are guaranteed to get crumbly rice. Grate the cheese, peel and seed the apple and cut into cubes, chop the onion, cut the olives (each) into four slices. Put all the prepared ingredients in a salad bowl and season with a sauce of sour cream mixed with vinegar and salt.
Salad "Spicy"
The combination of olives and mushrooms is quite popular. Try how these products are combined in a spicy vegetarian salad. Ingredients:
- Black olives without pits - 150 g;
- Marinated mushrooms - 100 g;
- Onion - 1 onion;
- Lemon is a half.
Preparation:Peel and seed the lemon and chop finely. Also chop the olives, mushrooms and onion. Put everything in a salad bowl and season with the marinade from the jar of mushrooms. Add salt and pepper if desired.
Salad "Sunflower"
A very famous and popular salad in whicholives are also present. It is prepared in completely different interpretations: with meat, with chicken, with fish, with crab sticks. And this salad got its name for its very original design. Ingredients:
- Potatoes - 3-4 pieces;
- Eggs - 4 pieces;
- Liver of cod - 1 can;
- Black olives - 1 can;
- Green onion - 1 bunch;
- Chips (smooth) round or oval - for registration;
- Mayonnaise - for refueling.
Preparation:Boil the potatoes in their skins, cool, peel and grate on a coarse grater. Wash and finely chop the onion, mash the liver with a fork. Boil the eggs, then finely grate the whites and yolks separately. Layer the salad on a wide dish:
