Preparation: Boil the beets.This can be done in two ways. Simply boil the beets for two hours until they become soft, or boil them until half-cooked, and then cool them under running cold water. Of course, you can buy already boiled beets. So, peel the cold boiled beets and cut the pulp into small bars or cubes. Soak the prunes in warm water in advance, then let them dry and also cut them into cubes. Put the chopped ingredients in a salad bowl, add a little (one or two pinches) of salt and mayonnaise. Mix the salad and start eating. If you prepare this salad in advance, then add salt and mayonnaise to it only before serving. Otherwise, the beets will separate into water, and the salad will turn out runny.
Salad with beets, cheese and prunes
This is also a fairly simple recipe, differing from the previous one only by the presence of cheese. Ingredients:
- Prunes - 5-6 berries
- Medium beet - 1 piece
- Cheese - 100 g
- Salt and mayonnaise - according to your taste
Preparation:Boil the beets until soft, peel them and cut into pieces. Finely chop the prunes (if soft, just wash them, if hard, soak them in advance). Grate the cheese on a coarse grater. Then put the beets and prunes in a salad bowl, and mix the cheese with mayonnaise and salt. Season the salad with cheese and mayonnaise sauce and serve.
Dessert salad from beetroot
Dessert, oddly enough, can also be made from beets. For it we will need the following ingredients:
- 1 large beet
- 5-7 prunes berries
- 1 handful of walnuts
- Sour cream and sugar
Preparation:Boil the beets until half-cooked, then peel them and cut into circles or half-circles. Place the beet circles on a greased baking sheet, sprinkle with sugar and put in the oven. Bake the beets over low heat until the sugar melts into caramel. While the beets are baking, crush the walnut kernels and cut the prunes in half. Remove the finished beets from the oven, put them into bowls, pour sour cream over them and sprinkle with nuts. Decorate with prune halves on top.
Salad from beets, prunes and dried apricots
Original recipe for beet salad with dried fruits and nuts. Try to cook. Ingredients:
- 2 medium size beets
- 1 handful of prunes
- 1 handful of dried apricots
- 1 handful of peeled walnuts
- Leaves of green salad
- 2 garlic cloves
- Salt and mayonnaise
Preparation:First, boil, cool and peel the beets. While it is boiling, soak the dried fruits in warm water, peel and crush the nuts. Then cut the prunes and dried apricots into very small pieces, grate the garlic and beets, wash and dry the salad leaves. In a bowl, mix the beets with dried fruits, nuts and salt, add mayonnaise and stir. Line the bottom of a flat salad bowl with green leaves, and pile the salad on top. Layered salad with herring
A more complex version of beetroot salad with prunes. For such a salad we will take the following ingredients:
- 1 small herring
- 1 small beet
- 1 head of onions
- 1 handful of prunes
- Vinegar
- Mayonnaise
Preparation:For this salad we also use boiled beets, which we chop with a large grater. We cut up the herring: we free it from skin and bones, and cut the resulting fillet into small pieces. Then we finely chop the onion and pour it with table vinegar for about ten minutes. While the onion is marinating, we cut the prunes into small pieces and begin to lay out the salad in layers:

Beetroot salad with mustard sauce
A very interesting salad in its composition. For it we use the following ingredients:

- Sweet Dijon mustard
- Mayonnaise or unsweetened yogurt
Preparation:Boil a couple of small beets, let them cool and peel them. Wash, peel, dice two potatoes and boil until done. Cut three small pickles into circles and dice the beets.
