The name of the salad is well known, but the recipeIt, oddly enough, has different versions. The most famous recipe for "White Birch" is a salad with chicken, mushrooms and prunes. But it is also prepared with liver and meat. Mushrooms are also different. Some prefer fresh champignons or wild mushrooms, and some prepare this salad with pickled mushrooms. Some housewives add carrots to the salad, others put apples in it. But the most remarkable thing about this salad is its design. So, no matter which recipe you choose, the main thing is to design the salad so that it becomes "White Birch". And the design of the birch salad can also be different.
Decoration of salad «White birch»
The whole trick of the design is to make a salad,reminiscent of the characteristic coloring of birch bark - dark stripes on a white background. First, about the stripes. In the traditional recipe, they are made from soaked prunes. But there are recipes where the stripes are “drawn” with black olives. Some particularly sophisticated artists manage to lay them out with black caviar (even from protein caviar). And someone uses dark purple basil leaves for this. Now about the background. There are fewer options here. Either you grease the top of the salad with mayonnaise or sour cream, or sprinkle with grated egg white or light cheese. We figured out the background and stripes. Let's figure out how to serve the salad. Any recipe for "White Birch" is a recipe for a layered salad. And here you can choose one of two ways to serve it. In the first case, the layers are placed in a deep and preferably transparent salad bowl, and the top of the salad is simply decorated with a pattern of birch bark. In the second version, the layers are placed on a flat plate in the form of a birch log. This salad looks more impressive, and you can complement it with other decorations. Green salad leaves imitating curly birch foliage are suitable as additional decorations. You can make "grass" at the base of the log, taking dill or parsley for this. You can plant mushrooms (real pickled or made from eggs) in the "grass". And you can let ladybugs crawl from cherry tomatoes or red bell peppers along the trunk of our birch log. In a word, there are as many canvases as there are artists. But in order to beautifully decorate the salad, you need to choose its recipe. And each recipe is interesting in its own way.
Salad "White birch". Traditional Recipe
This is the most common recipe for such a beautiful and tasty salad. It includes the following ingredients:
- Chicken breast;
- Champignon;
- Eggs;
- Fresh cucumbers;
- Onion;
- Prunes;
- Mayonnaise;
- Vegetable oil,
- Greenery.
Preparation:Wash and chop half a pack of fresh champignons (200 g). Finely chop one onion and fry the mushrooms together with the onion in vegetable oil. Boil the breast, cool and cut into long thin strips. Also cut the cucumbers (2 pcs.). Grate the hard-boiled eggs (2 pcs.). Soak the prunes (about six) for about five minutes and let them dry. Start assembling the salad, spreading each layer with mayonnaise and seasoning with salt:
- fried with onion mushrooms,
- chicken meat,
- eggs,
- cucumbers.
Grease the top layer generously with mayonnaise and lay out the prunes, imitating the stripes on the birch bark. Decorate with greens at your discretion.
White birch salad with liver
A salad variation that uses liver instead of chicken and olives for garnish. Try this recipe for comparison. Ingredients:
- Beef liver;
- Eggs;
- Carrot;
- Potatoes;
- Onion;
- Greenery;
- Mayonnaise;
- Vegetable oil for roasting;
- Black olives.
Preparation:Boil half a kilo of beef liver and grate it on a fine grater or mince it (grind it in a blender). Wash one carrot, peel it and cut it into strips. Chop the onion. Fry the carrots and onions in vegetable oil. Boil a couple of washed potatoes in their skins, cool them, peel them and grate them on a grater (coarse). Three hard-boiled eggs – also grate them (yolks and whites separately). Lay out the salad in layers, spreading them with mayonnaise and seasoning with salt:
- boiled liver
- fried carrots with onions,
- boiled potatoes,
- egg yolks,
- egg whites.
Decorate the salad as you wish, using black olives for “drawing”.
White birch salad with apples and cheese
An interesting recipe for a famous salad, including cheese and apples. By the way, black olives are also used to decorate this salad. Ingredients:
- Chicken meat;
- Eggs;
- Onion;
- An Apple;
- Cheese;
- Mayonnaise;
- Black olives;
- Vegetable oil.
Preparation:Boil the chicken and cut off the fillet: for the salad we will need about half a glass of chopped meat. Boil three eggs hard, separate the yolks and whites and grate them on a coarse grater. Peel and seed one apple (with a sweet and sour taste) and also grate on a coarse grater. Hard cheese (one hundred grams) - also on a grater. Cut the onion into rings and fry in vegetable oil, put it in a colander to drain off excess oil. Start laying out the salad in layers:

White birch salad with crab sticks
Another salad recipe that was born (all overprobability) after the appearance of crab sticks in our stores and on our holiday menu. And what's also remarkable: this recipe includes canned mushrooms. Ingredients:
- Packing of crab sticks;
- Bank of canned mushrooms;
- 250 g of cheese;
- 2 heads of onions;
- Mayonnaise;
- Prunes (5-6 pieces);
- Green salad;
- Vegetable oil.
Preparation:Cut the onion into thin half rings and fry in vegetable oil. At the very end, add the canned mushrooms, which we first remove from the marinade, rinse and dry. Grate the cheese on a coarse grater. Cut the crab sticks into small cubes. Wash the green salad leaves, dry them and put them on a flat dish. Put half of the crab sticks on top of the salad and grease this layer with mayonnaise. Put half of the mushrooms fried with onions on the crab sticks, and half of the cheese on top of them. Grease with mayonnaise. Then repeat all the layers except for the lettuce leaves: crab sticks, mayonnaise, mushrooms with onions, cheese, mayonnaise. Decorate the salad with prunes.
Salad "White birch" with prunes
This recipe is almost no different from the traditional one. But much more prunes are needed to prepare this version of the salad: a whole layer is laid out. Ingredients:
- 300 g of chicken meat;
- 200 g of fresh champignons;
- Bulb;
- 3 eggs;
- 2 fresh cucumbers;
- 200 g of prunes;
- Mayonnaise;
- Vegetable oil;
- Greenery.
Preparation:Boil the chicken breast, cool and cut into cubes. Cut the onion into half rings. Wash, dry and slice the mushrooms. Fry the mushrooms with onions in vegetable oil and throw them in a colander to drain off excess oil. Cut the cucumbers into strips, chop the hard-boiled eggs. Wash the prunes and soak them in boiled water for ten minutes. Then dry them and chop finely (leave a few for decoration). Lay the salad in layers, spreading each layer with mayonnaise:
- prunes,
- mushrooms with onions,
- a hen,·
- eggs,
- cucumbers.
Decorate the salad with prunes and herbs.Note: You can “modernize” this recipe and replace fresh mushrooms with canned ones, and fried onions with those soaked in vinegar.
