Almost every grandmother has her ownher signature recipe for making pancakes with meat, which she often pleases her loved ones with. This is a fairly filling dish of everyday cuisine, even a not very experienced, young housewife can cook it. There are many recipes for pancakes with meat: with milk, kefir, with mushrooms, which many will like.
Pancakes with meat on milk
This recipe requires the following ingredients:
- 200 g of pork;
- 200 g of beef;
- 1 medium bulb;
- 0.5 liters of milk;

The consistency of the dough should not be too liquid, otherwise the pancakes will tear, and not very thick. It is best to fry pancakes in a specially designated pancake pan. If you do not have one, you can use a regular cast iron pan. To prevent the first pancake from coming out lumpy, sprinkle a layer of salt on a dry pan and fry it, after which the surface is wiped with a kitchen towel (paper). Grease the well-heated pan with refined vegetable oil using a silicone brush. You can also use the old grandmother's method - prick a piece of lard on a fork. This will also give the pancakes additional flavor. After all the pancakes are fried and the filling is prepared, all that remains is to wrap them. Pancakes with chicken and mushrooms, cooked on kefir
You will need:
- Kefir;
- 2 eggs;
- Bulb;
- Soda;
- Flour;
- Salt;
- Chicken breast;
- Champignon.
First, according to the recipe, you need to make the dough:Take a bowl, break eggs into it, pour kefir, add salt, soda (about a quarter of a teaspoon), mix everything. Take a second bowl, sift flour into it through a fine sieve. This is done in order to saturate the dough with oxygen. Next, pour the kefir mixture into the flour, beat the mass with a whisk or mixer, which will prevent lumps from appearing. If necessary, add more kefir to the dough, it should not be too thick. Leave the dough for about 30 minutes. Wash the chicken breast, dry it well with a kitchen paper towel, chop the meat finely with a knife. Peel the onion, chop as finely as possible. Wash the champignons, dry them, cut into small slices. You will need:

- 1 eggplant;
- 1 Bulgarian pepper;
- 1 onion;
- 2 cloves garlic;
- 4 tomatoes;
- Flour;
- Milk;
- 2 eggs;
- Salt;
- 1 tablespoon of sugar (canteen);
- Vinegar;
- Hot red chilli pepper.
Wash the eggplant and dry it with a kitchen towel.cut into small cubes. Cut the bell pepper, remove veins and seeds, chop finely, chop the onion. Boil the meat, then chop it using a blender or meat grinder. Put the frying pan on medium heat, pour in a little refined sunflower oil. Fry the onion, eggplant and bell pepper, add the boiled meat, put in hot red chili pepper (preferably ground), salt, cook for another 5 minutes. Remove the filling from the heat, add chopped garlic. Next, according to the recipe, you need to prepare the sauce. Wash the tomatoes, make cuts on them, scald with boiling water (this is done in order to remove the film from them). Then grate them or chop them in a blender, be sure to strain (so that there are no seeds). Put the tomatoes in a frying pan, add sugar, salt, vinegar, hot red chili pepper, garlic, cook until boiling. Next, according to the recipe, you need to prepare the dough for the pancakes: break the eggs into a bowl, pour in some milk, mix. Sift the flour through a sieve, add to the dough, mix with a whisk (mixer). Pour in the remaining milk, add water, salt. The dough should not be too liquid, but not too thick. Bake the pancakes in a frying pan greased with vegetable oil. Put the meat filling in the middle of each pancake, wrap the edges, fold like an envelope.
