It is said that the color green has aexclusively positive impact on a person. And imagine what benefit green vegetables and fruits bring when they get inside our mortal body. Green not in the sense of unripe, but in the sense of green in color. Green salad leaves, cucumbers, zucchini, parsley and dill (and other herbs), stalk celery, broccoli, green beans, green peas, gooseberries, avocado, kiwi... Their value lies not only in the countless amount of vitamins and microelements, but also in the fact that the calorie content of this food is almost negative. That is, we eat - and do not get fat, but only get better. Of course, you can crunch on a green apple or cucumber, you can chew on curly parsley or enjoy sweet gooseberries. Or you can make a delicious green salad for dinner or breakfast. Let's find out the recipes for such salads from green vegetables and diversify our menu with light and healthy snacks. And don't worry about their calorie content - here it is simply minimal.
The easiest recipe for a green salad
This green salad is made (you won't believe it!) from green salad leaves. And the recipe for its preparation is, well, simply indecently simple. Needless to say, its caloric content is also low (indecently). Ingredients:
- Leaf salad (3-4 kopecks)
- Vegetable oil (3 tablespoons)
- Lemon juice (1 tablespoon)
- Salt, black pepper, mustard
Preparation:Wash the lettuce leaves thoroughly and let the water drain. Tear them (tear them, not cut them) into small "pieces" and season with a light sauce. To prepare the sauce, dissolve salt in lemon juice, add ground black pepper and pour in vegetable oil. Shake everything well and mix with ready-made mustard. Note: If you don't have ready-made mustard, take a tablespoon of mustard powder and dilute it with boiled water, add a little sugar and grind: this will not affect the taste of the dressing or the calorie content of the salad.
Salad with green garlic
This green salad recipe will pleasegarlic lovers. Its green shoots, by the way, have a pronounced (but mild) garlic flavor and aroma. Try adding green garlic stalks to a salad – it should be delicious. Ingredients:
- Leaves of green salad (100 g)
- 1 stalk of garlic
- Green onions (1 bunch)
- Mayonnaise
- Sour cream
Preparation:Wash the lettuce leaves, green onions and garlic. Dry them and chop finely. Season with a sauce made from mayonnaise and sour cream mixed in equal amounts. This recipe does not require adding salt, but you can salt the salad if you wish. Note: If you are concerned about the high calorie content of mayonnaise and sour cream, make a salad with vinegar dressing.
Salad with Savoy cabbage
We take all the vegetables in any quantity,True, the basis of the salad should still be cabbage. Why Savoy? Firstly, it is low in calories, has a more delicate structure and, of course, a rich green color. And green vegetables are put in this salad. What an interesting recipe! Ingredients:
- Cabbage
- Cucumber
- Celery celery
- Green pea
- Dill
- Parsley
- Lemon juice
Preparation:Remove the dirty outer leaves from the cabbage head. Cut the head into four parts and cut out the stalk, and finely chop the leaves. Chop the washed and dried greens, cut the cucumber and celery into strips. Season with lemon juice. The result is excellent taste and minimal calories!
Salad with spinach and strawberries
The recipe is just right for the start of the summer season.Spinach turns green, strawberries turn pink. Have you tried combining these seemingly incompatible products? Give it a try. Slightly bitter (but so healthy!) spinach, by the way, goes very well with fruits and berries. Ingredients:
- Leaves of young spinach (400 g)
- Fresh strawberries (200 g)
- Onion (half of head)
- Olive oil (half a tablespoon)
- Wine vinegar (4 tablespoons)
- Salt (half a teaspoon)
- Jam (strawberry, apricot or raspberry)
- Fried almonds
Preparation:Place very small spinach leaves (washed and dried) into this green salad whole, and tear larger ones into "shreds". Wash the strawberries and cut each berry in half, and then cut the halves into thin slices. Cut the onion into thin, almost transparent "feathers". Mix the spinach with the strawberries and onion and season with sauce. To prepare the sauce, mix olive oil, vinegar and salt and shake well, then add two tablespoons of jam. Before serving, sprinkle the salad with fried almonds.
Salad with avocado
Avocado is not yet a completely familiar productfor our table. But we are slowly starting to "get a taste" for it and are preparing dishes with this fruit more and more often. True, the calorie content of this fruit is still high, but if you add it to green salads, it will not harm your figure. Here, for example, is how you can prepare a green salad with avocado. For two servings of salad, you will need the following ingredients:
- 400 g of unbroken potatoes
- 300 grams of broccoli salt
- 100 g fresh spinach
- 1 hard ripe fruit avocado
- 1 green paprika pod
For the sauce:
- 1 bunch of greenery (parsley, dill, green onions, tarragon, sorrel, etc.)
- 150 g unsweetened yoghurt (3.5% fat content) 100 g sour cream
- 8 chopped walnuts
- 2 tbsp. spoons chopped parsley
Preparation:Boil the jacket potatoes in plenty of water, drain, cool slightly, peel and cut into cubes. Peel the broccoli, separate into small florets and wash. Wash, peel and cut the broccoli stems into small pieces. Boil the broccoli in lightly salted water for fifteen minutes, then drain and dry everything well. Meanwhile, sort out the spinach, wash and dry well. Cut large leaves into several pieces. Peel the avocado, cut in half, remove the seeds and cut lengthwise into thin slices. Cut the slices in half horizontally. Wash the sweet pepper pod, dry with a paper napkin, cut into four parts, remove the seeds and cut horizontally into thin strips. Clean the greens if necessary, wash well and shake off. Mix sour cream with yogurt and mix together with greens. Salt the sauce to taste. Mix all the prepared ingredients. Season the salad with green sauce, sprinkle with walnuts and parsley.
Salad with bacon
Of course, green salad is, first of all,low calorie and high vitamin value. However, such a salad can be made more filling (and probably more delicious). So if you want to feed healthy greens, for example, to your man, who in principle does not want to "chew grass" and is not going to count calories, then offer him a salad with bacon and egg. This recipe will most likely suit his taste. Ingredients:
- Head of lettuce
- Green onions (bunch)
- Onion (1 pc.)
- Eggs (2 pcs.)
- Bacon cooked-smoked (200 g)
- Vegetable oil (2 tablespoons)
- Black pepper
Preparation:Wash and dry the green salad and onion. Chop the onion, cut the lettuce into thin strips. Boil the eggs hard - into small cubes. Cut the bacon into thin strips and fry with finely chopped onions in vegetable oil. Throw the frying in a colander to drain the oil. Place all the prepared products in a salad bowl, season with pepper and quickly mix. This recipe does not call for salt.
Salad from green beans
Another recipe, the calorie content of which cannot be called low. But still, it is also a green salad and, by the way, very tasty. Ingredients:
- Chicken fillet (200 g)
- Green string beans (200 g)
- Large pickled cucumbers (2 pcs.)
- Head of onions
- Sour Cream (100 g)
- Mustard seeds (1 tbsp.)
- Vegetable oil for roasting
- Salt

Fry the onion rings in vegetable oil, cool and drain the excess oil. Cut the pickled cucumbers into small cubes. Mix the sour cream with mustard seeds and salt and season the salad. Note: To reduce the calorie content of this salad, you can use a mixture of vegetable oil with wine or apple cider vinegar as a dressing. Prepare light salads that will work with all types of green vegetables. Diversify any recipe by adding herbs and fruits to the salad. Make a light salad dressing. And feel free to start your meal.
