Preparing the marinade and preparing the foodFirst, you need to take the duck and clean it from the remaining feathers. Then it should be thoroughly washed and dried, soaking it with a paper towel both inside and out. Now let's put the duck aside and start preparing the spicy marinade. According to the recipe, you need to mix the spices, add olive oil and pour in the lemon and orange juice. Grease the duck well on all sides with the resulting marinade and leave it to marinate for 2 hours. While our duck is marinating, we can prepare the apples. One half of the apples should be cut into 8 pieces, we will stuff the duck with it, you need to stuff the belly and neck of the duck. Remember that the apples should not be placed too tightly so that they bake until done. After stuffing, the belly should be sewn up with threads or pinned with toothpicks.
