But if, for example, we serve salads for a regular table in large salad bowls, then at a buffet we use tartlets and profiteroles for this purpose. These are dough products that can be filled with a variety of contents: salads, pates, meat, mushrooms, in a word, everything that your imagination is capable of. Thin pancakes are perfect for these purposes, which can also be filled with any filling. Another option is vegetables. They can be stuffed (for example, peppers, tomatoes) or used as a base. There are many ideas, so let's get down to business: we give recipes for dishes for a buffet.

Canape on skewers

Ingredients:

  • 300 grams of hard cheese
  • 200 grams of large grapes
  • 200 grams of cherry tomatoes
  • 2 sweet and sour apples
  • 2 pears
  • lemon juice

Method of preparation: Wash vegetables and fruits.Peel the apples and pears, cut into cubes and sprinkle with lemon juice to prevent them from darkening. Cut the cheese into cubes as well. Thread onto skewers: apple, cheese, pear; cherry tomatoes, cheese, grapes. Note: You can use different types of cheese and grapes, thereby diversifying the taste of the canapés. It is preferable to choose sweet cherry tomatoes.

Grilled shrimps with teriyaki sauce

Ingredients:

  • 500 grams of large shrimp
  • 200 grams of cherry tomatoes
  • 150 milliliters of teriyaki sauce
  • 3-4 cloves of garlic
  • 30 grams of crushed fresh ginger
  • chili pepper (or pasta from this pepper)
  • 50 grams of olive oil
  • juice of one lemon

Preparation:Marinate the prepared and peeled shrimp in teriyaki sauce, to which add lemon juice, hot chili pepper (or paste), chopped garlic and ginger and a little olive oil. They can be left in the refrigerator overnight. Thread the shrimp and cherry tomatoes onto skewers and grill for 4-5 minutes on both sides. If you don’t have a grill, you can fry the skewers in a frying pan. Serve with teriyaki sauce. Note: Teriyaki sauce is sold in specialized stores that sell products used in oriental cuisine.

Kebabs of chicken breast

Ingredients:

  • 500 grams of chicken breast
  • 50 grams of olive oil
  • 2 cloves of garlic
  • 1 tablespoon of honey
  • 50 grams of soy sauce
  • 1-2 teaspoons of hot chilli sauce
  • juice of one lemon

Method of preparation:Prepare a marinade from soy sauce, olive oil, crushed garlic, honey, hot sauce and lemon juice. Cut the meat into small cubes and dip into the marinade. Ingredients:

  • 5 small tomatoes
  • 100 grams of dried tomatoes
  • 200 grams of mozzarella
  • a bunch of green basil
  • salt pepper

Method of preparation:Cut off the tops of the tomatoes and carefully scoop out the pulp with a spoon. Salt the inside of the tomatoes and sprinkle with pepper. Chop the mozzarella, add the sun-dried tomatoes cut into thin strips, and finely chopped basil. Salt and pepper everything, add a little of the oil in which the sun-dried tomatoes were cooked. Stuff the tomatoes. Garnish with a basil leaf. Note: Instead of mozzarella, you can use Adyghe, amateur cheese or good cottage cheese.

Spicy eggplant rolls

Ingredients:

  • 2-3 average aubergine
  • 50 grams of hot chilli sauce
  • 3 tablespoons mayonnaise
  • 3 cloves of garlic
  • salt, pepper, greens to taste
  • 30-50 grams of vegetable oil

Method of preparation:Cut the eggplants lengthwise into thin slices, sprinkle with salt and leave for 30 minutes. Meanwhile, prepare the dressing: mix hot sauce, mayonnaise, chopped garlic, add salt, pepper, and herbs to taste. Wash off the salt from the eggplants, dry and fry in vegetable oil. Spread the prepared dressing on the cooled eggplant strips, roll up and secure with a toothpick. Note: Eggplants absorb a lot of oil. Profiteroles with meat salad

Ingredients for profiteroles:

  • 100 grams of butter
  • 1 glass of water
  • 1 cup of flour
  • 3-4 eggs
  • a pinch of salt

Method of preparation:Pour water into a saucepan, add butter, a pinch of salt and put on the fire. When the water boils and the butter melts, gradually pour in the flour, stirring constantly to avoid lumps. Brew the flour (a pleasant nutty smell should appear). Cool the dough slightly (it should be warm, but not hot) and add the eggs one by one, mixing them into the dough in a circular motion. Add the next egg after the previous one has completely combined with the dough. Form small balls, place them on a baking sheet at a sufficient distance from each other and bake in the oven, preheated to 175 degrees. Do not open the oven for the first half hour, so that the profiteroles do not "fall". Ingredients for the salad:

  • 300 grams of boiled veal
  • 1 large onion
  • 1 black radish
  • 30-40 milliliters of olive oil
  • 1 spoon of mayonnaise
  • salt, pepper, greens to taste

Method of preparing the salad:Boil the meat in one piece with roots and spices (to your taste). To keep it juicy, put it in boiling water. Fry finely chopped onion in olive oil until a slight mushroom smell appears. Grate the radish. Cut the meat into small cubes, add fried onion, grated radish, salt, pepper (the pepper should be felt), season with herbs and mayonnaise. Cut off the tops of the profiteroles and fill them with the resulting salad, cover with lids, garnish with herbs. Note: It is not necessary to use mayonnaise, since the salad is already quite high in calories. Black radish can be replaced with daikon radish, it has a more delicate taste, so you can give it more, the salad will only benefit from this.

Profitroles with salad from squid

Ingredients:

  • ready-made profiteroles (see above)
  • 3 small squid carcasses
  • 2 onions
  • 4 boiled eggs
  • 30 milliliters of olive oil
  • 2 spoons of mayonnaise
  • salt, pepper, greens
  • lemon juice

Method of preparation:Place the prepared squid carcasses in boiling water (you can add a teaspoon of lemon juice) and cook for no more than 4 minutes. Otherwise, the squid will become hard. Fry finely chopped onion in olive oil. Cut the cooled squid into small strips, add fried onion, chopped eggs, salt, pepper, season with herbs, mayonnaise, and lemon juice. Cut off the tops of the profiteroles and fill with the prepared salad. Note: You can add marinated mushrooms (champignons, honey mushrooms, chanterelles) to this salad. All of the listed salads can also be used to fill tartlets - baskets made of puff pastry or shortcrust pastry. You can make them yourself, or it is easier to buy ready-made ones. The main thing is to make the right choice. To do this, you will have to try several varieties and decide on the most suitable option. Tartlets should be fresh, tender (not hard under any circumstances), and should not have any unpleasant tastes or smells. This is possible in cases where unscrupulous manufacturers use low-quality or expired fats.

French pie of kish

Ingredients for the dough:

  • 300 grams of flour
  • 150 grams of butter
  • 1 egg + 1 yolk (you can use 2-3 tablespoons of cold water instead of eggs)
  • a pinch of salt

Ingredients for the filling:

  • 150 -200 grams of ham
  • 2 onions
  • 40 grams of butter
  • 150 grams of hard cheese
  • 2 eggs
  • 150 milliliters of milk or cream
  • salt, pepper, nutmeg

Method of preparation:Sift flour, mix with salt, add cooled butter cut into cubes. Chop everything into small crumbs (you can use a blender, food processor or a regular knife). Then add the egg (or a spoonful of water), mix, add the yolk (or a spoonful of water). You need to achieve such a consistency that the resulting mass can be gathered into a ball. Wrap the dough in film and put in the refrigerator for 30-40 minutes. Cut the ham into strips, the onion into small cubes, fry everything together in butter. Grate the cheese. Beat the eggs, gradually adding milk (or cream), salt, pepper, add a pinch of nutmeg and beat again. Spread the dough over the surface of the baking pan, greased with butter, form the sides. Then cover the surface of the dough with baking paper, sprinkle a handful of beans or peas on top and put in the oven for 15 minutes (180 degrees). Take out the form, remove the paper and put the ham with fried onions on the baked pie base, sprinkle with grated cheese and pour the egg-milk mixture. Grease the edges with a beaten egg or melted butter. Bake the pie at 180 degrees for about half an hour. When serving, cut into portions.
