Cheese soups for our national cuisine- new. Actually, they came to us from French cuisine, but over time, their recipes changed, became simpler and adapted to our domestic realities. For example, during the times of total shortage, when good cheese was hard to find, smart housewives learned to cook cheese soup from processed cheese. And what is remarkable is that the experiment turned out to be so successful that today there is simply an incredible number of recipes for such soup. We offer you some of these recipes.
The Simplest Cheese Soup
This soup is so simple that it's amazing!And in terms of savings, this soup is a real find. However, its taste is not inferior to the famous French cheese soups. However, you can see for yourself. Ingredients:
- Processed cheese - 200 grams;
- Butter - 2 tablespoons;
- Onion - 1 onion;
- A liter water pan;
- A loaf of white bread.
Preparation:Place a pot of water on the stove and bring it to a boil. Meanwhile, peel the onion, finely chop the onion and fry it in butter until it has a light golden crust. Cut the cheese into small pieces or grate it. Cut the loaf into small cubes or sticks and also fry it (separately from the onion!) in butter. When the water boils, pour a small amount of boiling water over the cheese and stir until it has almost dissolved. Now pour the cheese mixture into a pot of water and cook until it has completely dissolved. At the very end, add the fried onion to the soup and cook for another three minutes. If desired, season our cheese soup with salt and spices. Serve with croutons of white bread, pouring them into plates.
Cheese soup with chicken
A hearty and light soup made from processed cheese can also be made with meat. The best option is chicken soup. Ingredients:
- 1 chicken (about a kilogram);
- 1 onion;
- 2 fresh carrots;
- A third of a glass of semolina;
- 2 processed cheese;
- 2 leaves of laurushki;
- 2 chicken eggs;
- Green parsley.
Preparation:Cut the washed chicken carcass into pieces, put it in a saucepan and fill it with water (cold!). Put the saucepan on the fire and let the water boil, then remove the scum. Now peel the carrots and onions, wash them and put them whole in the saucepan with the chicken, and also add the bay leaf. Continue cooking the soup for about half an hour, and then take out the chicken, vegetables and bay leaf. You can throw away the bay leaf and onion - we won't need them anymore. Next, pour semolina into the boiling broth and, stirring, cook for about five minutes. After that, cut the chicken fillet into medium-sized pieces, and the carrots into strips. Grate the cheese and put it in a bowl. Pour raw eggs, a quarter cup of water and beat the egg-cheese mixture well, then pour it into the broth and cook, stirring, for about three minutes. Season the soup with chicken and carrots, add pepper and salt and let the soup simmer for about five minutes. All that remains is to put chopped greens in the soup, turn off the heat, and cover the pan with a lid. When our cheese soup has simmered for ten to fifteen minutes, you can start eating.
Cheese soup with vermicelli
A quick dish. Well, who among the housewives does not want to quickly prepare a first course? When such a desire or need arises, you can use this recipe. Ingredients:
- 2 processed cheese;
- 1 onion;
- 2 potatoes;
- 2 handfuls of vermicelli (100 grams);
- 1 carrot;
- 3 teaspoons of butter;
- 2 liters of water;
- Greenery;
- Salt and spices.
Preparation:Place a pot of water on the stove and bring to a boil. While the water is boiling, grate the processed cheese on a coarse grater, then pour the cheese shavings into the boiling water. Cook the soup until the cheese melts (about seven minutes). At this time, peel and wash the potatoes, carrots and onions. Grate the carrots on a coarse grater, cut the potatoes into cubes or strips, and finely chop the onion. Melt the butter in a frying pan and sauté the carrots and onions in it for about five minutes. Then add the chopped potatoes and the carrot and onion frying to the broth made from the curds. Continue cooking the soup until the potatoes are soft, then season it with vermicelli. The soup is ready in three minutes. All that remains is to add salt, spices and chopped herbs.
Soup with melted cheese and shrimps
Cheese soup with seafood - a gourmet's dream! And why aren't we gourmets? That's why we make soup with processed cheese and shrimp. Ingredients:
- 4 processed cheese;
- 400 grams of peeled shrimp;
- A glass of fresh milk;
- 3-4 potatoes;
- 1-2 carrots;
- Half a lemon;
- 2 tablespoons of vegetable oil;
- 2 leaves of laurushki;
- Green parsley;
- Salt and spices.
Preparation: Grate the cheese.Pour a liter of water into a saucepan and bring it to a boil. Wash the shrimp and put them in the boiling water. Add the juice of half a lemon and spices. As soon as the water boils again, cook the shrimp for two minutes and remove them from the saucepan, and strain the broth. Now take a larger saucepan, pour the broth into it, add two liters of water and shavings of processed cheese. Salt the soup and cook until the cheese dissolves. Meanwhile, peel and chop the potatoes, then put them in the soup and continue to cook for another fifteen minutes. During this time, we need to sauté the carrots, grated on a coarse grater, in vegetable oil, and then put them in the soup. After the carrots, put the peeled shrimp and pour in the milk. Let the soup boil and season it with chopped parsley. That's all. Our gourmet soup is ready!
Rice soup made of melted cheese
A hearty soup of processed cheese with rice, cabbage and tomato. How do you like this option? Ingredients:
- 100 grams of cabbage;
- 1 head of onions;
- 1 tablespoon of tomato paste;
- 1 tablespoon butter;
- 2 carrots;
- 1 fused cheese;
- 2 tablespoons of rice;
- 1 liter of chicken broth;
- Salt and spices.
Preparation:Put the broth on the fire and wait until it boils. Meanwhile, peel the onion and carrot and cut them into strips. Shred the cabbage and rinse the rice. Grate the cheese. When the broth boils, add salt and put in the chopped vegetables, tomato paste, grated cheese and rice. Let the soup boil and cook for seven to ten minutes. Then turn off the heat, cover the pan with a lid and leave the soup to infuse for another ten minutes.
