  • 2/3 cup of flour;
  • 100 grams of sugar;
  • 4 whole eggs;
  • 1/3 cup of starch;
  • 1 tablespoon of Amaretto liquor;
  • 3/4 glasses of strong black coffee;
  • 1 teaspoon of vanilla sugar;

  • 4 yolks;
  • 200 grams of sugar;

For baking, prepare a split form with a diameter of 23-26 centimeters, turn on the oven and heat it to 180 degrees. Cover the bottom of the form with parchment paper, pour in the dough and bake the sponge cake for about 30 minutes, checking for readiness with a skewer or match. Then cool the baked sponge cake and cut it into two equal layers. Now you need to prepare the cream for the cake. To do this, first build a water bath, and then start making the cream. Mix the yolks of four eggs with 200 grams of sugar and one-quarter cup of coffee and beat this mixture with a whisk in a water bath for about ten minutes until the mass thickens. By the way, the water should not boil in the pan! Separately beat the Mascarpone cheese and add the yolk mass to it in two or three steps. Also beat the cream with powdered sugar and gradually add it to the cream. Now you can assemble our Italian cake. Mix the remaining coffee with liqueur and soak each sponge cake with the resulting mixture. Then take a split form, place one cake on the bottom and lay out sponge cookies around the perimeter to make something like a fence. Grease the cake with half of the cream, cover with the second cake and spread the cream again, distributing it over the entire surface. Decorate the cake with chocolate, nuts or some other way. Cake Tiramisu at home

  • 50 grams of flour;

  • A glass of strong chilled coffee;
  • 80 grams of bitter chocolate;
  • 75 grams of powdered sugar;

  • 30 grams of starch;
  • 1 liter of cream (20% fat and above);
  • 3 tablespoons lemon juice;
  • 3 tablespoons of cognac or Amaretto liquor;
  • 1 teaspoon baking powder for dough;
  • 1 bag of vanillin.

Preparation:The day before making the cake, you need to prepare the Mascarpone cheese, from which we will make the cream. To do this, heat the cream to 80 degrees, add lemon juice and heat it over low heat for about ten minutes. Throw the resulting mixture onto a linen cloth or gauze folded in five or six layers and leave to drain overnight. In the morning, you get about half a kilo of soft cream cheese, from which you can make cream for the Tiramisu cake. Classic Tiramisu, of course, should be made with Savoiardi cookies made from egg-based biscuit. To make such cookies at home, you need to mix two eggs with 50 grams of sugar, add vanillin and beat with a mixer for one minute at the highest speed. Then you need to gradually, sift through a sieve, add flour, starch and baking powder to the sweet mass of eggs and mix everything together with a mixer at the lowest speed. The dough is ready. Now line the baking tray with baking paper, grease with margarine and sprinkle with flour. Transfer the finished dough into a pastry bag and squeeze out ten to twelve centimeter long sticks onto the baking tray. Sprinkle them with powdered sugar through a sieve and bake in an oven preheated to 200 degrees for about ten minutes. Carefully transfer the sticks to a wire rack and cool. To prepare the cream, carefully separate the five remaining eggs into yolks and whites. Thoroughly grind the yolks with 200 grams of sugar. Add cream cheese to the resulting mixture and stir. Separately beat the whites into a thick foam and gradually add them to the cheese-yolk mixture. Mix everything thoroughly but carefully with a wooden spatula from the bottom up. Assemble the cake. First of all, mix the coffee with cognac and prepare a rectangular cake pan. Dip the Savoiardi biscuits in coffee and place them on the bottom of the mold so that they are completely covered. Put a layer of half the cream on top. Place the second layer of biscuits, soaked in coffee with cognac, and grease it with the remaining cream.
