mint cakeThe Mole Hill cake is a gift to us fromGerman confectioners. It got its name for its external resemblance to a mound above a mole's hole, and in its homeland this dessert is called Maulwurftorte, which sounds like Mole cake. Naturally, the cake recipe exists both in a classic version and in a modernized or adapted to our cuisine. But in any case, the main ingredients and the method of preparing this cake remain unchanged. By and large, any cake assembled and decorated accordingly can be called a Mole Hill. But you should still stick to the recipe to get a real German Maulwurftorte. We offer you several popular recipes for this cake.

Classic "Mole Cake"

The classic recipe for Mole Hill is a recipe for chocolate cake with bananas and cottage cheese cream on gelatin. Ingredients:

  • Eggs of chicken - 4 pieces;
  • Sugar sand - 1 glass with a slide;
  • Flour - 1 glass with a slide;
  • Cocoa powder - 1 tablespoon;
  • Steep boiling water - 4 tablespoons;
  • Vanilla sugar - half a sachet;
  • Baking Powder - half a sachet.

For the cream:

  • Gelatin - 15 grams;
  • Cream fatty - 2 cups;
  • Fresh bananas - 4-5 pieces;
  • Cottage cheese soft - 250 grams;
  • Sugar sand - incomplete glass;
  • Chocolate chips - 100 grams.

Preparation:To make the cake, we first need to bake a sponge cake. To do this, separate the raw eggs into yolks and whites. Put the whites in the refrigerator, and mix the yolks with hot water and grind thoroughly, gradually adding granulated sugar and vanilla sugar. Then beat the yolk mass for about two to three minutes. Now take the whites out of the refrigerator and beat them into a thick, fluffy foam, which should be smooth and strong. After this, put the protein foam on the yolk mass, but do not stir. Separately mix the sifted flour with cocoa powder and baking powder, and then pour it onto the protein foam. Now carefully mix everything, making a sponge cake dough. Line the baking pan with parchment paper, pour the dough into it and send it to the oven preheated to 180-200 degrees. Bake the sponge cake for about half an hour. Remove the finished cake from the mold and let it cool completely. Then scoop out the sponge cake with a teaspoon or tablespoon, leaving only its bottom and walls about a centimeter thick. Crush the scooped out sponge cake into crumbs. Now prepare the cream. Soak the gelatin, let it swell, and then heat it in the microwave or in a water bath until completely dissolved. Whip the cooled cream into a foam, and grind the cottage cheese with one mashed banana and sugar. When the sugar in the cottage cheese dissolves, add chocolate chips, whipped cream and gelatin. The cake cream is ready. Place the peeled and cut bananas lengthwise in the bowl made from the cake. Place the cream on top of the bananas, forming a dome out of it, and put the cake in the refrigerator for about six hours. When the cream has completely set, take the cake out of the refrigerator and sprinkle it with biscuit crumbs. Sprinkle cocoa powder or chocolate chips on top.delicious mint cake

Cake "Mole Hole"

Like all foreign desserts, GermanMaulwurftorte has undergone changes, having got into the cookbooks of domestic confectioners. Someone decided to modernize the recipe in accordance with their tastes, and someone simply tried to replace some components of the classic recipe. As a result, another cake was obtained, which was called "Mole's Hole". Ingredients:

  • Eggs of chicken - 4 pieces;
  • Sugar sand - half a glass;
  • Vanilla sugar - 1 packet;
  • Butter butter - incomplete pack;
  • Flour is an incomplete glass;
  • Cocoa powder - 2 teaspoons;
  • Baking powder - 2 teaspoons;
  • Chopped hazelnuts - half a glass;
  • Chocolate bitter - 1 tile;
  • Gelatin - 20 grams;
  • Thick berry jelly - 2 cups;
  • Cream - 1 glass;
  • Yogurt - 1 part glass.

Preparation:Separate raw eggs into yolks and whites. Beat the whites (preferably chilled) with a pinch of salt until stiff and fluffy. Grind softened butter with granulated sugar and vanilla sugar and beat, adding egg yolks one at a time. Mix sifted flour with cocoa and baking powder and gradually add to the yolk-sugar mixture, kneading a homogeneous dough. At the end of kneading, add chopped nuts and chocolate chips to the dough. Turn on the oven and let it heat up to 180 degrees. Prepare a baking pan by covering it with parchment paper. Now gradually add the protein foam to the dough, one tablespoon at a time, and mix everything carefully but thoroughly. Pour the biscuit dough into the pan and bake the cake for about half an hour. Remove the finished cake from the oven, leave for fifteen to twenty minutes, and then remove from the mold. Now cut out a bowl-shaped cake from the cake, taking the biscuit out of the middle and leaving the walls and bottom about a centimeter or two thick. Chop the scooped-out pulp into crumbs. Soak the gelatin and leave it to swell. Meanwhile, pour out a third of the jelly and coat the cake from the inside with it. Combine the remaining jelly with yogurt. Dissolve the gelatin in a water bath or in the microwave and cool. Meanwhile, whip the cream until foamy. First add the gelatin to the jelly and yogurt mixture, then add the whipped cream. Put half of the biscuit crumbs into the cream, mix and fill the biscuit cake with cream. Sprinkle the remaining crumbs over the cake and put it in the refrigerator until the cream has completely set. In two or three hours, our cake is ready! You can dust it with cocoa powder or sprinkle it with chocolate chips. You can also mold a mole figurine from a mixture of biscuit crumbs, cocoa powder and butter and decorate the cake with this figurine. In fact, you can approach the cake decoration creatively. The cake itself, of course, should look like a mound over the mole's hole. And you can decorate it with a figurine molded from mastic or biscuit-butter mass. And chocolate or cream flowers, and fresh fruits or berries. You can "plant" grass around the cake, made from the same mastic or butter (protein) cream. Add flowers or mushrooms to the grass. And to keep the mole company, you can make other animals. By the way, such a cake is perfect for a children's party. And although the original "Mole Hill" looks very laconic and even ascetic, the cake can be made very beautiful and bright. And what's stopping us? Everything is in our hands. The main thing is to cook with pleasure. Bon appetit and success in the culinary field!
