Simple salad with cucumbers and eggs

This is the simplest and easiest option (recipeI can't even bring myself to name it!). It's perfect as a light but filling snack at the dacha or at a barbecue. All you need to prepare it is:

  • four fresh large cucumbers;
  • two eggs;
  • leaves of green salad;
  • one tablespoon of vegetable oil;
  • salt, pepper and herbs - to taste;

Boil the eggs hard.Cut the cucumber into long oblong slices, then divide them into two parts. Tear the lettuce leaves with your hands - this will allow them to retain their taste and vitamins. Cut the eggs into circles or use an egg slicer. Mix all the ingredients in a salad bowl and add vegetable oil. That's it, the salad is ready!

Salad of cucumbers and eggs with seeds

Quite an original variation on the themecucumber and egg salad. An interesting flavor is achieved by adding sunflower seeds to the salad, which are also an excellent source of polyunsaturated fatty acids. So, for 4 servings you will need:

  • one kilogram of cucumbers;
  • four eggs;
  • two tablespoons of vegetable oil;
  • salt;
  • ground pepper;
  • one bunch of dill;
  • Two hundred grams of sour cream (10% fat content);
  • two tablespoons of sunflower seeds;

Wash and peel the cucumbers.Cut in half lengthwise and scrape out the pulp and seeds with a spoon. Dry in a sieve and collect the juice. Cut the cucumber halves lengthwise into one-centimeter-thick strips. Heat the vegetable oil and simmer the cucumbers in it over medium heat for five minutes, then add salt and pepper. Add the cucumber juice, cover and simmer for about fifteen minutes. At the same time, hard-boil the eggs. Cool the cucumbers completely in their own juice, then drain the liquid. Cut each egg into four wedges and add to the cucumbers. Meanwhile, wash the dill, dry it with a paper napkin and separate the leaves from the stems. Set aside a few of the prettiest tops of the stems for decoration, chop the rest. Mix the sour cream and dill, season generously with salt, pepper and a small amount of cucumber juice. Pour this sauce over the cucumber and egg salad. Fry the sunflower seeds in a frying pan without adding fat until the aroma appears, then cool on a plate. A spicy and filling version of cucumber and egg salad.Garlic adds a wonderful and bright flavor. It is better to add hard cheese to this salad, for example, Dutch, as indicated in the recipe. To prepare it, you will need:

  • four or five eggs;
  • two fresh cucumbers;
  • three hundred grams of Dutch cheese;
  • a quarter of a glass of mayonnaise;
  • a quarter of a glass of sour cream;
  • three cloves of garlic;
  • a few twigs of parsley and dill;
  • salt and pepper - to taste;

Peel the cucumbers and cut them lengthwisetwo halves and cut into a semicircle. Boil the eggs hard, cool, peel them and cut them in an egg slicer (or just chop them finely). Grate the garlic on a fine grater or use a garlic press. Grate the cheese on a coarse grater or cut into small cubes.   • two tablespoons of mayonnaise or vegetable oil - for dressing;
  • salt and pepper to taste;

  • four fresh cucumbers;
  • three boiled eggs;
  • half a cup of tomato juice;
  • half a can of olives;
  • spices and salt - to taste;
  • a pair of twigs of cilantro;
