How to cook spaghetti
First, a few words about how to cookspaghetti. It would seem that there is nothing complicated about it? Put water on the fire, boil it, add salt, cook the pasta - and that's it. But no! After all, spaghetti is not an ordinary side dish, but a full-fledged dish, seasoned with sauce. We will now tell you how to properly prepare this base. First of all, decide on the amount of spaghetti. Sometimes the recipe contains such a clause, and sometimes it does not. What to do in these cases? If spaghetti is your main (or even only) dish, then take them at the rate of 100 grams per person. If this is just a prelude to dinner, then you can limit yourself to 50 grams. Now let's start choosing cooking utensils. Of course, ideally, you should use special dishes for spaghetti - rectangular and of the appropriate length. However, if you do not have one, you can take a regular large saucepan (two to three liters) with a wide bottom. Fill it with water two-thirds of the way and bring the water to a boil. Salt it and put the dry spaghetti in there, but do not break it under any circumstances — Italians do not do this at all! In just a few seconds, the part in the water will become soft, and you will be able to put it deeper, folding it a little. This way, you will be able to put all the spaghetti in the saucepan without damaging its structure. When the spaghetti boils, you can reduce the heat a little, but do not leave the kitchen under any circumstances, otherwise you can forget about it and simply ruin the dish. Do not forget to stir the pasta regularly, as this prevents it from sticking to each other. The spaghetti can be considered ready when it reaches the state of “al dente”, or “to the tooth”. You can determine this by cutting one pasta - there will be a small dark hard spot inside. However, we are not going to waste time on this! - 300 g of champignons;
- 4-5 tomatoes;
- 1 onion bulb;
- 2 tablespoons of tomato paste or sauce;
- 1 teaspoon of sugar;
- 1-2 tablespoons of red or white dry wine;
- vegetable oil;
- salt and pepper - to taste;
Peel and finely chop the onion.Wash, dry and slice the mushrooms. Chop the peeled garlic and washed greens. Heat a spoon of vegetable oil in a saucepan and fry the onion with half of the greens and garlic. After three to four minutes of stirring occasionally, add the mushrooms to the mixture and fry for about eight more minutes. Wash the tomatoes, peel them and chop them in a blender.
