Basic recipe for homemade noodles

This recipe can be considered basic. And you can make this soup with any meat - it depends solely on your preferences. Ingredients:

  • 1 kilogram of meat;
  • 1 head of onions;
  • 1 carrot;
  • 3 tablespoons vegetable oil.

For the test:

  • 350 grams of flour;
  • 1 egg;
  • 70 grams of water;
  • Black pepper;
  • Salt and bay leaf.

Preparation:First, you need to prepare the noodles themselves, for which we use a recipe for regular unleavened dough. So, take the wheat flour and sift it directly onto the table or into a bowl and collect it in a mound. Make a small hole at the top of the resulting mound. Break the egg into a glass, then add water, salt and mix thoroughly until smooth. Pour the resulting mixture into the hole in the flour and knead the tough dough, which should be smooth and elastic. Generously sprinkle the table with flour, roll out the dough into a thin layer, cut into strips and leave them to dry. The broth can be cooked in advance, but if you have fresh meat or chicken, it will cook quickly. So, wash the meat, cut into pieces and cook until tender. To make the broth tasty, pour cold water over the meat and cook it over low heat in an open saucepan. By the way, the broth from the meat on the bone turns out richer. Do not forget to periodically remove the scum, but do not add water. When the broth is ready, make the soup dressing. Peel and finely chop the onion and carrot. You can grate the carrot on a coarse grater, but it is better to cut it into strips or thin circles. Put the frying pan on the fire and pour in the vegetable oil. When the oil is hot, put the carrot in it and fry until lightly golden. Then add the chopped onion and cook the frying for another three minutes. If you are cooking soup with grated carrots, you should first fry the onion, and then add the carrots to it. Now you can season the soup. First, put the vegetable frying in the broth and wait until it boils. After that, season the soup with noodles and cook until done. About five minutes before the end of cooking, add salt, black pepper and bay leaf to taste. When the soup is cooked, remove the bay leaf and season it with chopped greens. Cover the pan with a lid and let the soup sit for about twenty minutes.

So, take the wheat flour and sift it into a bowl or directly onto the table and pile it up. Make a small hole at the top of the resulting pile. Break the egg into a glass, then add water and salt and mix thoroughly until smooth. Pour the resulting mixture into the hole in the flour and knead a steep, smooth and elastic dough. Now sprinkle the table with flour and roll out the dough into a very thin layer - the thinner, the tastier the noodles will be. Sprinkle the dough layer on top with flour and roll it into a not very tight roll. Now cut the noodles across the roll. And cut the dough, starting from the corner of the rolled roll. Scatter the cut strips of dough on the table and leave them to dry. Cook the broth from the chicken carcass. It is great if you have a saucepan that will fit the whole chicken. Then you need to boil the bird whole, after rinsing it and pouring cold water over it. When the chicken is ready, take it out of the broth and take out all the bones. Divide the remaining fillet into small pieces and put it back into the broth. Finely chop the peeled and washed vegetables and fry in vegetable or butter. Put the saucepan with broth on the fire and let it boil. Now add the fried vegetables to the soup and wait for the broth to boil again. Then season it with noodles and cook for another ten minutes. At the end of cooking, add salt, ground black pepper and sugar. Serve the soup with fresh herbs, soft bread or croutons.
