By the way, manufacturers offer us even different kinds of special home-made noodles for soups. But there are some dishes for which ready-made pasta products do not fit. For example, in order to cook a delicious and real chicken soup with homemade noodles, this noodle must first be cooked. And for many other soups, it is soft and fresh home-made noodles that are needed. For preparation of noodles the classic recipe for dumplings or vareniki is quite suitable. You can also use the recipe for a baked unleavened dough, but in any case, an egg should be added to such a dough. Otherwise, the noodles in the soup boil. By the way, it can be procured for future use and stored in dry form. For this purpose, the noodles are left on the table or on a cutting board before drying, and then they are put into a bag. In addition, homemade noodles can be frozen (like dumplings), but it tastes like freshly made.
A bit of history
In fact, for Russian national cuisine, noodles andSoups from it are not native dishes. We politely borrowed this dish from the Tatars and sincerely began to regard it as our national dish. In South-East Asia, soups with rice noodles and seafood are preferred. But in our fatherland they came up with the most delicious, aromatic noodles with mushrooms. In general, it is impossible to embrace the immense, so we offer you only a small part of the national recipes of soup with home-made noodles.
Basic recipe for homemade noodles
This recipe can be considered basic. And you can cook this soup with any meat - it already depends on your preferences. Ingredients:
- 1 kilogram of meat;
- 1 head of onions;
- 1 carrot;
- 3 tablespoons vegetable oil.
For the test:
- 350 grams of flour;
- 1 egg;
- 70 grams of water;
- Black pepper;
- Salt and bay leaf.
Preparation: First, you need to prepare the noodles themselves, for which we use the recipe of a conventional unleavened dough. So, take the wheat flour and sift it right on the table or in the bowl and collect it with a slide. At the top of the resulting hill we make a small pit. We break the egg into a glass, and then add water, salt and mix well until smooth. The resulting mixture is poured into a groove in flour and kneaded a stiff dough, which should turn out to be uniform and elastic. Generously powder the table with flour, roll the dough into a thin layer, cut into strips and leave them to dry out. Broth can be cooked in advance, but if you have a pair of meat or chicken, then it will cook quickly. So, cut my meat into pieces and cook until ready. To make the broth tasty, pour the meat in cold water and cook it over low heat in an open pan. By the way, broth from meat on a bone turns out more sated. Do not forget to remove the scum from time to time, but do not add water. When the broth is ready, we make a dressing for the soup. Onions and carrots are cleaned and finely shredded. Carrots can be grated on a large grater, but it is better to cut it with straws or thin circles. We put a frying pan on the fire and pour oil into it. When the oil is hot, spread the carrots into it and fry until light golden. After that, add the chopped onion and cook the fry for another three minutes. If you cook soup with grated carrots, then first fry the onions, and then add carrots to it. Now you can fill the soup. First we put vegetable broth in broth and wait until it boils. After that, fill the soup with noodles and cook until done. For about five minutes before the end of the soup, we put salt, black pepper and bay leaves to taste. When the soup is cooked, we remove the laurus from it and fill it with chopped greens. Cover the pan with a lid and let the soup brew for about twenty minutes.
Chicken noodles in Russian
Chicken soup with homemade noodles is, so to speak,classics of the genre! In fact, the classic recipe is a rooster soup. But today we limit ourselves to ordinary chickens. And still, if such an accident happens, then you must weld the broth from the domestic cock. In extreme cases, buy soup chicken. Ingredients:
- 1 chicken;
- 1 head of onions;
- 1 carrot;
- 1 parsley root;
- Greenery;
- Salt pepper.
For the test:
- 350 grams of flour;
- 1 egg;
- A third of a glass of water;
- A pinch of sugar;
- Pepper, salt.
Preparation: To start, again, you need to make the very noodles. The recipe for the test will be used traditional, but the way of cutting noodles is different. So, take wheat flour and sift it into a bowl or directly on the table and collect it with a slide. At the top of the resulting hill we make a small pit. The egg is broken into a glass, and then we add water and salt to it and mix it thoroughly until it is uniform. The resulting mixture is poured into a groove in flour and kneaded with a steep, homogeneous and elastic dough. Now sprinkle the table with flour and roll the dough into a very thin layer - the thinner, the tastier the noodles will turn out. Paste the dough from above and sprinkle with flour and turn it into a not very tight roll. And now, cut the noodles across the roll. And we cut the dough, starting with the corner of the rolled roll. Diced stripes of dough scatter on the table and leave them to dry. We cook broth from chicken carcass. It's great if you have a saucepan, where the chicken will fit entirely. Then the bird needs to be welded with a whole carcass, previously rinsed and filled with cold water. When the chicken is ready, we remove it from the broth and extract all the bones. The remaining fillets are disassembled into small pieces and put into broth again. Peeled and washed vegetables are finely shredded and fried in vegetable or butter. We put the pot with the broth on the fire and let it boil. Now we fix vegetable soup in the soup and wait for the broth to boil again. Then fill it with noodles and cook for another ten minutes. At the end of the preparation, add salt, black ground pepper and sugar. We serve soup with fresh herbs, soft bread or croutons. Home made Tartar Noodles
The recipe for homemade noodles in our understanding isa soup recipe with a fine thin noodle. However, many peoples have very similar dishes, with a dressing from boiled dough. Here, for example, is a recipe of Tatar noodles. It is very tasty and satisfying, and it can be made in the form of diamonds, circles or squares. Ingredients:
- 1 kilogram of meat;
- Pepper, salt, spices at your discretion.
Dough:
- A glass of broth;
- 1 kg of flour;
- 6 eggs;
- Pepper, salt.
Preparation: Cook meat broth. To do this, wash the washed meat in a saucepan, pour cold water and set it on a slow fire. Cook the broth for about two hours, and then cast a glass of broth for the dough and cool it. The recipe for noodles in the national version differs only in the number of eggs that make up it. And here, instead of water, meat broth is added to the dough. So, to make noodles flour must be sifted on a table or in a bowl, mixed with salt and collected by a slide. At the top of the resulting hill, we make a deepening and break all the eggs into it. We begin to knead the dough, gradually pouring the cooled broth. The dough should turn out to be homogeneous, elastic and steep enough. Ready dough rolled into a thin layer and cut it with strips, rhombuses or small squares that leave to dry out on the table. Clean, wash and shashuem vegetables. Next in a frying pan with the addition of vegetable oil fry onions, and then add carrots and continue to fry for about five minutes. From the broth we take out the meat and put the pan on the fire. Cut the meat into pieces and sprinkle with salt. When the soup boils, we put fried vegetables in it, add salt, pepper and spices. We wait for the broth to boil and fill it with noodles. We continue to cook the soup for another ten minutes. Before serving, add pieces of meat and chopped greens to the noodles.
Nudel - homemade noodles in German
In Germany, soups with noodles are not very popularenjoy. And yet in this kitchen there is not even one recipe for such a first dish. for example, you can prepare a noodle soup in Berlin or a homemade noodle in a German version. Ingredients:
- 1 chicken carcass;
- 10 medium potatoes;
- 2 handfuls of homemade noodles;
- 3 cloves garlic;
Greens, salt and pepper. Preparation: Cook the usual chicken broth. It is important not to digest meat! We make noodles on any favorite recipe and leave it to dry out. Potatoes are cleaned, washed and cut into small pieces. We take the prepared chicken out of the pan and cut into portions (straight with bones), and the broth is filtered. In a frying pan with vegetable oil fry the chopped garlic, and then take it out. In the resulting garlic oil fry the first pieces of chicken, and then potatoes. Broth is brought to a boil, salt, pepper, noodles and cook for about ten minutes. We give the noodle as follows. In a broth cup pour chicken broth, generously flavored with chopped herbs, and on a separate plate lay out toasted chicken and potatoes.
Turkish noodles with tomatoes
Ingredients:
- 1 liter of meat broth;
- 100 grams of homemade noodles;
- 2 tablespoons butter;
- 3 fresh ripe tomatoes;
- Greens, salt, black pepper.
Preparation: We make noodles from an unleavened dough and leave it to dry out. We cook any meat broth, salt it, pepper and season it with spices to your taste. Tomatoes and cut into small cubes. In the boiling broth, we first put the noodles, and then cut the tomatoes. Reduce heat and cook soup for about ten minutes. We serve soup hot, seasoning with melted butter and chopped greens. Cook at least once a soup with homemade noodles and feel the difference. And let the recipe for its preparation at first glance seems complicated, and the process is labor-intensive.
