Unlike other meat by-products, the language does notan internal organ, and a muscle, although quite peculiar. Maybe that's why, and maybe for other reasons, the language was and remains a delicacy, and quite expensive. And they prepare it, as a rule, for a festive table: jellied from the tongue, slicing from boiled cold tongue and, of course, salads with tongue. And yet language is considered not only a delicacy, but also a suitable product for dietary nutrition. And yet about salads. This, perhaps, is the most multivariate dish from the language. Here, for example, a salad with tongue and cucumber. Do you think this is just one recipe? Not guessed: even such a seemingly simple salad can be cooked completely differently.
- Beef tongue - 1 piece;
- Fresh cucumbers - 2-3 pcs .;
- Pickled cucumbers - 2-3 pcs .;
- Sweet (French) mustard.

Preparation: First for salad you need to boil the tongue in the vegetable broth. To do this, the language is good for mine, we put it in a saucepan and pour it with cold water. We also add washed and peeled carrots, parsley root and one onions (we do not need to cut vegetables, so we put them whole). Boil the tongue for about two hours, and somewhere about fifteen minutes before the end of cooking, we add salt to the broth, a couple of leaves of laurel and a few peas of black pepper. Cooked tongue is cooled and peeled. With a well-welded tongue, it can be removed easily, and if somewhere the peel is hardly behind, then it can be cut with a knife. Then, the cleaned tongue is cut into thin strips (strips or brusochkami). The main thing is that the pieces are very long. The number of cucumbers we take from the ratio: one cucumber per hundred gram of tongue. That is, on an average language weighing about three hundred grams, we need three fresh and three salted cucumbers. Cucumbers also cut into straws, put them in a salad bowl and add to them sliced tongue. By the way, if the cucumber (especially salted) to peel, then the salad will be more gentle. Almost ready salad is dressed with mayonnaise and mustard sauce. For this we mix three parts of mayonnaise with one part of French mustard. If you do not have it in stock, you can replace it with the usual one (Russian), only you need to put it down much less and add a little sugar and lemon juice to the sauce. Well, at the end of the preparation, the salad can be sprinkled with finely chopped herbs, for example, parsley with cilantro, dill, or basil.
Salad "Count of Dracula"
- Beef tongue - 300 g;
- Fresh cucumbers - 300 g;
- Hard cheese - 150 g;
- Mayonnaise and ketchup for refueling.
Preparation: The tongue is boiled, chilled, peeled and cut into strips. Cucumbers are good for washing, drying and cutting straw too. Mix the cut products, put them into a salad bowl and sprinkle with grated cheese. From above decorate the salad with a mesh of mayonnaise and drops of ketchup (like drops of blood). Note: This salad can still be prepared and portioned, laying it in the crockery. And the salad can be seasoned with mayonnaise, and for decoration use only ketchup.
- Boiled tongue - 300 g;
- Ham - 200 g;
- Fresh cucumbers - 300 g;
- Red ground pepper.
Preparation: Boil the tongue, cool it and clean it from the skin, mine and dry the cucumber. Then cut the strips of tongue, ham and fresh cucumbers, put everything in a salad bowl, mix and season with red pepper and salt. We dress the salad with the usual mayonnaise and decorate with chopped herbs.
- Pig tongue - 400 g;
- Fresh cucumbers - 3 pcs .;
- Eggs - 3 pieces;
- Bulgarian red pepper - 1 piece;
- Bulgarian pepper is yellow - 1 pc .;
- Canned green peas - 300 g;
Preparation: Boil, cool and clean the tongue. We cook hard-boiled eggs, mine and dry vegetables, and still remove seeds and septa from peppers. Then we prepare the products for decorating the salad: one cucumber, one egg yolk, half a piece of yellow and red pepper and a dozen peas. All other ingredients are cut into cubes. The cut products are put in a salad bowl, we add green peas to them, fill it with salt and mayonnaise and mix. Now we begin to "grow" lilies. We cut the cucumber into four parts and cut each of them with figured teeth. Then we remove the pulp, leaving a thin layer on the edge - ready for sepals for flowers. Petals for lilies are cut from red and yellow pepper, cut into long narrow triangles. We put the petals in the sepals, and in the middle we put a quarter of the yolk. From the stalk of parsley we cut "stamens", on which we put on peas. We put the "stamens" in the yolks. Lilies stack on a salad and decorate with leaves of parsley.
- Beef tongue - 1 piece;

- Shrimp - 100 g;
- Eggs - 2 pieces;
Preparation: Boil in salted water (you can with roots and onions) language. We let it cool and remove the rough cuticle, after which we cut the tongue with straw. Washed and dried cucumber - also straws or brusochkami. Boil, cool and clean the shrimp. Hard boiled eggs, chill, chop and grind on a large grater. Spread the salad layers:
