And it is usually prepared for a festive table: jellied tongue, sliced ​​boiled cold tongue and, of course, salads with tongue. And the tongue is considered not only a delicacy, but also a suitable product for dietary nutrition. And yet, about salads. This is, perhaps, the most multi-variant dish from the tongue. For example, here is a salad with tongue and cucumbers. Do you think this is just one recipe? You are wrong: even such a seemingly simple salad can be prepared in completely different ways.

Salad "General"

Ingredients:

  • Beef tongue - 1 piece;
  • Fresh cucumbers - 2-3 pcs .;
  • Pickled cucumbers - 2-3 pcs .;
  • Sweet (French) mustard.
  • Mayonnaise;

For the broth:

  • Onion;
  • Carrot;
  • Bay leaf;
  • Parsley root;
  • Black peppercorns.

Preparation:First, for the salad, you need to boil the tongue in vegetable broth. To do this, wash the tongue well, put it in a saucepan and fill it with cold water. Add washed and peeled carrots, parsley root and one onion (the vegetables do not need to be cut, so add them whole). Boil the tongue for about two hours, and about fifteen minutes before the end of cooking, add salt, a couple of bay leaves and a few black peppercorns to the broth. Cool the boiled tongue and peel it. The skin comes off easily from a well-boiled tongue, and if the skin is difficult to peel off somewhere, you can cut it off with a knife. Then cut the peeled tongue into thin strips (strips or bars). The main thing is that the pieces are long. The number of cucumbers is taken from the ratio: one cucumber per hundred grams of tongue. That is, for an average tongue weighing about three hundred grams, we need three fresh and three salted cucumbers. We also cut the cucumbers into strips, put them in a salad bowl and add the sliced ​​tongue to them. By the way, if you peel the cucumbers (especially the salted ones), the salad will be more tender. Season the almost finished salad with a sauce of mayonnaise and mustard. To do this, mix three parts mayonnaise with one part French mustard. If you do not have any, you can replace it with regular (Russian) mustard, but you need to put much less of it and add a little sugar and lemon juice to the sauce. Ingredients:

  • Beef tongue - 300 g;
  • Fresh cucumbers - 300 g;
  • Hard cheese - 150 g;
  • Mayonnaise and ketchup for refueling.

Preparation:Boil the tongue, cool, peel and cut into strips. Wash the cucumbers well, dry and also cut into strips. Cut the cucumber into four parts and cut each of them into curly cloves. Then take out the pulp, leaving a thin layer along the edge - the sepals for the flowers are ready. Ingredients:

  • Beef tongue - 1 piece;
  • Fresh cucumber - 1-2 pcs .;

  • Eggs - 2 pieces;

Preparation:Boil the tongue in salted water (or with roots and onions). Let it cool and remove the rough skin, then cut the tongue into strips. Wash and dry the cucumber - also into strips or bars.
