Pea soup with smoked chicken

Ingredients:

  • 300 grams of peas
  • half smoked chicken
  • 1 tablespoon of olive oil
  • 2 onions
  • 2 carrots
  • white roots
  • 100 grams of smoked bacon
  • 100 grams of bacon
  • salt, pepper to taste

Method of preparation:Wash the peas thoroughly, cover with cold water and leave to swell for several hours. Put the onion, carrot and white roots (parsley, celery, parsnip) in cold water and bring to a boil. Then lower the skin removed from the smoked chicken into the boiling vegetable broth and cook for about 15 minutes so that it gives off its aroma. After this, strain the broth, put the pan back on the fire, bring to a boil and add the soaked peas (drain the water they were in). Cook over low heat until the peas are fully cooked. Ingredients:

  • 300 grams of peas
  • 2 chicken thighs
  • 100 grams of bacon
  • bulb
  • a stalk of leek
  • carrot
  • 2 tablespoons of olive oil
  • salt, pepper, bay leaves
  • greenery

Method of preparation:Pre-soak the peas, cover with cold water and cook until completely soft. Remove the meat from the bones, peel and cut into small pieces. Fry the skin together with chopped onion, leek and carrot in olive oil. Remove the skin and add the fried vegetables to the pan with the peas. Salt and pepper to taste, cook everything together for 5-7 minutes and remove from heat. After 20 minutes, make a puree with a blender. Fry the bacon until crispy.
