Marmalade is not marmalade, chewing gum is not chewing gum,candy - not candy. Ah! This is a delicacy familiar from childhood - pastila. It is probably simply impossible to come up with a healthier sweet. Especially if the pastila is prepared without adding sugar. So, almost everyone knows what it tastes like, but not everyone knows how to prepare such a delicacy. Meanwhile, it turns out that it is very easy to prepare pastila at home. The process is quite simple, and the composition of the pastila recipe is dictated only by the season or your own tastes. Try making pastila - and you will certainly be convinced of this.
Beleu pastila
The Historical Recipe That Started It Allfamous recipes for fruit pastila. The author of this recipe was the merchant Prokhorov, who, based on folk recipes, came up with a way to process and store apples. This significant fact happened back in 1888. Since then, Belevskaya pastila (named after the city of Belev) has become known in many, many countries around the world. Ingredients:
- Antonov's apples (bucket)
- Sugar (12 glasses)
- Egg whites (8 pcs.)
- Powdered sugar
Preparation: Wash, peel and finely chop the apples.Place in an aluminum pan and simmer in the oven until puree forms. Cool the finished puree, rub it through a sieve or a colander. Beat the whites, add sugar and mix with the puree. Beat again until the mass becomes lighter. Set aside a couple of glasses of puree (for greasing the layers). Place the remaining mass on two baking sheets covered with parchment paper and dry in the oven at the lowest heat for several hours. Remove the dried layers, turn the paper over and moisten it with water. Grease the layers with the remaining mass and roll them into rolls. Place them back on the baking sheet (seam down) and dry in the oven again. Rub the finished pastila rolls with powdered sugar, wrap in parchment and store in a dry, cool place.
Apple pastille
The most common recipe.Whether it's because we've always had a lot of apples, or because almost everyone likes apples. However, this method can be considered basic for making pastila at home. Ingredients:
- Fresh apples
- Water
Preparation: Select good apples.Wash, cut into halves and remove the core. Take a thick-bottomed saucepan and pour water to a height of one centimeter. Pour the apples into the saucepan and put the saucepan on the fire. Bring to a boil and cook (without stirring!) over low heat for half an hour to two hours - the time depends on the variety and size of the apples. Leave the finished apples in the saucepan until completely cool. Then strain, draining the liquid, and rub the apples through a sieve. Put the resulting puree on a baking sheet covered with cling film (baking paper), smooth the apples in a thin layer (four to five millimeters) and leave to dry. Remove the finished pastila from the film and turn over, allowing the other side to dry. Then cut into pieces of the desired size and store in a jar or wrapped in cling paper.
Pastille from pears (Slovak)
Another fruit pastila recipe. This time from pears, and in Slovak style! Let's try to cook it? Ingredients:
- Kilogram of pears
- A glass of sugar
- Water
Preparation:Wash the pears thoroughly and cut into slices. Pour some water into a saucepan and pour in the pears. Boil them until soft, rub through a sieve and boil again to evaporate excess liquid. Then add sugar and boil again until completely thickened. Put the hot puree on a baking sheet covered with baking paper. Spread the still hot mass on the paper and dry in the oven. Roll up the finished pastila and store in closed glass jars.
Pastilla from corn flour
An unusual and original recipe for making pastila. Ingredients:
- Half a kilo of cornmeal
- Glass of sugar
- 3 cups of milk
- A pinch of salt
Preparation:Pour milk into a saucepan, add all the sugar and salt, and bring to a boil. Carefully pour corn flour into the boiling milk (stirring). Cook over low heat until the mixture thickens. Place the still hot mixture on a tray, smooth it out into a thin layer, and leave to cool and harden. Cut the finished pastila into pieces of the desired size.
Pastilla from raspberry
For variety, we also offer you a recipe for berry pastila. Try making aromatic raspberry pastila. Ingredients:
- Raspberries
- Raspberry juice
Preparation: Squeeze a glass of juice from the raspberries.Wash the remaining berries in cold water and put them in a saucepan. Cover the saucepan with a lid and set the oven to steam the berries. Rub the steamed hot raspberries through a sieve. Dilute the resulting raspberry puree with juice and put it on the stove. Boil until the puree volume decreases by half. Then spread the puree on a baking sheet covered with baking paper. Dry the pastila in the sun or in the oven. Sprinkle the finished pastila with powdered sugar and store in a cool and dry place. As you can see, the preparation is almost the same for all recipes: take fruits or berries, cook the puree, dry. Try it!
