No matter how tempting it was to learn how to cookrefined restaurant dishes or try a recipe from some famous chef, sometimes you want to cook something quite simple. The simple is not in the sense of minimal time and effort, but in the sense of simple composition and method of preparation. So simple, for example, is a recipe for homemade noodles with chicken. If you think that it is enough to cook chicken broth and put vermicelli into it, then you are deeply mistaken. The preparation of this rich, rich soup will require you not only to choose and cook a chicken, having received a faultless boiled broth, but also to make real home-made noodles. However, we suggest you choose a recipe and implement it.
Traditional chicken noodles
The recipe is in the style of minimalism. But just like that, with a minimal set of products, traditional chicken noodles are prepared. This recipe is also good because all products for it are only boiled and no pre-frying is required. Ingredients:
- Chicken meat;
- 1 carrot;
- 1 onion.
- 1 cup of wheat flour;
- 1 egg;
- Water to the desired consistency of the dough;
Preparation: For home noodles it is best to take soup chicken. The meat is more dense, it will have to be cooked longer, but the broth will turn out tastier, more saturated and aromatic than broth from the broiler chicken. The ideal option is generally a homemade chicken or even a cock. So, the bird is carefully mine, we remove the insides, if they were there, and if necessary, we sing out the carcass. We place the chicken in a suitable pan and fill it with cold water. We put the pan on the fire and cook the broth on a very slow fire. For a soup chicken or a cock it will take about two hours, and the broiler chicken should be cooked for no longer than an hour. Approximately half an hour before the broth is ready we put into it one whole (cleaned and washed) carrot and a whole peeled bulb. Broth cook in a saucepan with an open lid. While broth is being cooked, we make noodles. To do this, first mix the steep dough from flour, eggs and water. By the way, eggs can be put and more than one. So, we pour the sifted flour into a bowl, mix it with salt (one or two pinches) and collect it with a slide. We make a groove in the flour slide, break the egg there and begin to knead the dough, gradually pouring warm water. The dough is kneaded as follows. It should turn out to be steep, but plastic. Cover the dough with a clean towel or food film and leave at least half an hour for proofing. During this time, gluten will swell, and the dough will become softer and supple. After that, pour the table with flour and roll the dough into a thin layer. It remains to cut it with noodles. This can be done in several ways. If you have a special knife, then just use it. If it is not, you can cut the noodles with a regular knife, and to cut the dough strips evenly, cut them in a ruler. To save time, you can divide the stratum into several parts, sprinkle them with flour and add them with a pile, then start cutting the dough strips. And you can sprinkle the flour with a flour into a roll, and then cut it across the cross-section. In any case, the dough strips should be very narrow - not more than five millimeters. Cut into dough noodles leave to dry for about half an hour. From the finished broth we take out the chicken and divide it into portions or even separate the fillets from the bones. Pieces of chicken or fillets are put back in broth, and carrots and onions are taken out of it - we will no longer need vegetables. Broth put on the fire and let it boil. After that, fill the soup with noodles and cook on medium heat until the noodles are soft. Salt and spices are placed at the end of cooking.
Homemade noodles with chicken giblets
A recipe for lovers of chicken giblets. For such a soup can be used chicken hearts and stomach. And it is even better to take in equal proportions the hearts, stomachs and liver. Ingredients
- Chicken giblets - a pound;
- Onion - 1 head;
- Carrots - 1 piece;
- Potatoes - 2 pieces;
- Butter - 2 tablespoons;
- Vegetable oil - 2 tablespoons.
- Flour - 1 glass;
- Egg - 1 piece;
- Salt - half a teaspoon;
- Water - until the desired consistency of the dough.
Preparation: Noodles are made in advance, as this recipe does not provide for the preliminary preparation of broth. So, knead the dough from a glass of flour, salt, eggs and water. First, we pour the flour (sifted) into the bowl, add salt and egg. After this, we gradually begin pouring water, mixing the dough. Leave the dough for thirty minutes, covering it with a towel, and then roll out into a thin layer and cut into noodles. Noodles are also left to dry, spread out on a cutting board. Now put a pan of water on the fire. Gutting is washed and dried, and then fry them in vegetable oil. When the water in the saucepan boils, put in it roasted giblets and reduce fire. Vegetables wash and clean. Bulb shred as small as possible, and grate carrot on a large grater. In the frying pan, we dissolve butter and put onions in it, which is fried for two or three minutes. Then add the carrot to the onion and continue to fry for another five minutes. In the meantime, cut the potatoes into cubes and place it in broth, which should already boil. We finish the carrot-onion roast until ready and put it into the soup. We also add salt and spices to your taste, wait for the broth to boil again and put the noodles. Cook the soup for another five minutes and turn off the fire. Cover the pan with a lid and let us brew our chicken noodles with giblets.
Chicken noodles with vermicelli
If you are looking for a very simple recipe for chickennoodles, then this is your option. Of course, to call this soup homemade chicken noodles would not be entirely correct, but as an express version of this recipe quite fit. Ingredients:
- Chicken dump - 1 kilogram;
- Vermicelli - 2 handfuls;
- Potatoes - 2 pieces;
- Carrots - 1 piece;
- Salt and spices.
Preparation: From soup chicken set we cook ordinary broth. Depending on the quality of the ingredients of this set, either we leave in the soup pieces of carcass, or we separate the meat from the bones. Again put the broth on the fire. While it boils, we clean onions, potatoes and carrots. Carrots cut into circles and sent to broth first - it is cooked longer than onions. Once the soup boils again, we put a chopped onion into it. In the third turn, we fill the soup with potatoes, which are cut into cubes. When the potatoes are almost ready, we put vermicelli in a pot. By the way, for home noodles it is best to use vermicelli-spiderweb. However, keep in mind that it is cooked very quickly. So its better not to cook a little and leave to reach the readiness in a hot soup. If you digest noodles, then you risk getting some kind of jelly from a chicken instead of a beautiful and tasty homemade noodle. As you can see, the recipe for homemade chicken noodles is quite democratic. You can cook a classic version with noodles from your own cooked dough, you can use a thin vermicelli or even ordinary spaghetti. And yet, if you are looking for a recipe for real chicken noodles, do not save time and energy. The rich soup of soup chicken and handmade noodles are indispensable ingredients of this dish.
