- Chicken meat;
- 1 carrot;
- 1 onion.
For the noodles:
- 1 cup of wheat flour;
- 1 egg;
- Water to the desired consistency of the dough;
- Salt.
Preparation:For homemade noodles, it is best to take a soup chicken. Its meat is denser, it will take longer to cook, but the broth will be tastier, richer and more aromatic than broth from a broiler chicken. The ideal option would be a domestic chicken or even a rooster. So, wash the bird thoroughly, remove the entrails, if there were any, and singe the carcass if necessary. Place the chicken in a saucepan of a suitable size and fill it with cold water. Put the saucepan on the fire and cook the broth over very low heat. For a soup chicken or rooster, it will take about two hours, and a broiler chicken should be cooked for no longer than an hour. About half an hour before the broth is ready, put in one whole (peeled and washed) carrot and a whole peeled onion. Cook the broth in a saucepan with the lid open. While the broth is cooking, make noodles. To do this, first mix a stiff dough of flour, egg and water. By the way, you can put more than one egg. So, pour the sifted flour into a bowl, mix it with salt (one or two pinches) and collect it in a mound. Make a depression in the flour mound, break an egg into it and start mixing the dough, gradually adding warm water. Mix the dough well. It should be stiff, but flexible. Cover the finished dough with a clean towel or cling film and leave for at least half an hour to rise. During this time, the gluten will swell, and the dough will become softer and more pliable. After that, sprinkle the table with flour and roll the dough into a thin layer. All that remains is to cut it into noodles. This can be done in several ways. If you have a special knife, then just use it. If you don’t have one, then the noodles can be cut with a regular knife, and to make the strips of dough even, cut them along a ruler. To save time, you can divide the dough into several parts, sprinkle them with flour and stack them, then start cutting the dough strips. Or you can roll the floured dough into a roll and then cut it across the section. In any case, the dough strips should be very narrow - no wider than five millimeters. Leave the dough cut into noodles to dry for about half an hour. Remove the chicken from the finished broth and divide it into portions or even separate the fillet from the bones. Put the chicken pieces or the removed fillet back into the broth, and remove the carrots and onions from it - we will no longer need the vegetables. Put the broth on the fire and let it boil. Then season the soup with noodles and cook over medium heat until the noodles are soft. Add salt and spices at the end of cooking.
Homemade noodles with chicken giblets
A recipe for lovers of chicken giblets. For this soup, you can use chicken hearts and gizzards. Or even better, take equal proportions of hearts, gizzards, and liver. Ingredients
- Chicken giblets - a pound;
- Onion - 1 head;
- Carrots - 1 piece;
- Potatoes - 2 pieces;
- Butter - 2 tablespoons;
- Vegetable oil - 2 tablespoons.
For the noodles:
- Flour - 1 glass;
- Egg - 1 piece;
- Salt - half a teaspoon;
- Water - until the desired consistency of the dough.
Preparation:We make the noodles in advance, since this recipe does not require preliminary preparation of the broth. So, mix the dough from a glass of flour, salt, egg and water. First, pour the flour (sifted) into a bowl, add salt and egg. After that, gradually begin to pour in water, mixing the dough. Leave the dough for about thirty minutes, covering it with a towel, and then roll it out into a thin layer and cut into noodles. We also leave the noodles to dry, spreading them out on a cutting board. Now put a pot of water on the fire. Rinse and dry the giblets, and then fry them in vegetable oil. When the water in the pot boils, put the fried giblets in it and reduce the heat. Wash and peel the vegetables. Chop the onion as finely as possible, and grate the carrots on a coarse grater. Melt the butter in a frying pan and add the onion, frying it for two to three minutes. Then add the carrots to the onion and continue frying for another five minutes. Meanwhile, cut the potatoes into cubes and add them to the broth, which should already be boiling. Bring the carrot and onion mixture to readiness and add it to the soup. - Vermicelli - 2 handfuls;
- Potatoes - 2 pieces;
- Carrots - 1 piece;
- Salt and spices.
Preparation:Cook a regular broth from the chicken soup set. Depending on the quality of the ingredients, either leave the pieces of the carcass in the soup or separate the meat from the bones. Put the broth back on the fire. While it is boiling, peel the onion, potato and carrot. Cut the carrot into circles and add it to the broth first - it takes longer to cook than the onion.
