Making processed cheese with your own hands is a fairly easy process, but only if you follow the recipe exactly.
Homemade melted cheese with dill and cumin from cottage cheese

Next, according to the recipe, take butter (it should be softened), an egg, fresh dill (chopped), add everything to the curd mass, salt. Mix the mass thoroughly, put it on the stove. Cook on the lowest heat, stirring constantly, especially carefully watch that the cottage cheese does not stick to the bottom of the dish, otherwise the cheese will inevitably burn, and the product will be spoiled. The cooking process will take about 5 minutes, it is very important not to overcook the cheese mass, its consistency should be quite liquid. Pour the processed cheese into the prepared molds (you can use regular cups). When the mass cools down, move the homemade cheese to the refrigerator, where it will finally thicken.
Homemade melted cheese with walnuts
You will need:
- Cottage cheese - 1 kg;
- Milk - 1 l;
- Butter - 50 gr;
- Eggs - 2 pcs;
- Walnuts - a quarter cup;
- Sugar - 0.5 spoon (tablespoon);
- Salt;
- Black pepper (ground);
- Hot red chili pepper (ground).

If you took store-bought cottage cheese, then mix it with milk and put it on the stove, warm it up a little, do not cook it under any circumstances, the mass should only warm up. Take a colander, cover it with gauze folded in several layers, pour the heated cottage cheese there. Stir the mass with a spoon so that all the whey drains, then wrap the cottage cheese in gauze and put a press on top. If you are using homemade cottage cheese, then it is enough to simply wrap it in gauze, put it in a colander, and put a press on top, leave it like this for about 3-4 hours. During this time, the whey should leave the cottage cheese. Next, according to the recipe, mix the prepared cottage cheese with sugar, salt and eggs, mix thoroughly. Put the butter in an empty pan, after it melts, add the curd mass. Cook over medium heat, stirring constantly, at the end of cooking add black ground pepper and a little red hot chili pepper. Make sure that the cheese does not boil, when the curd melts, safely remove from the heat. Remove the walnuts from the shell, then grind either in a blender or with a meat grinder into small crumbs. If you want to feel the pieces of nuts on your tooth, then do not grind too finely. Then add the nuts to the processed cheese, put everything in the refrigerator. In about 6 hours, the homemade cheese will completely harden.
Frozen cheese with chocolate and dried fruits
You will need:
- Cottage cheese - 0.5 kg;
- Sour cream - 1 cup;
- Chocolate — 1 tile (100 g);
- Butter - 100 gr;
- Sugar - 50 gr;
- Soda - 0.5 teaspoon;
- Dried fruits (raisins, figs, prunes, dried apricots).

Let's start with preparing the cottage cheese, mix it with sour cream (can be replaced with milk or cream), and beat with a blender. Then put it in cheesecloth folded in several layers and hang it for 6-8 hours. Wash the dried fruits, then lay them out on a paper towel to remove excess moisture; dried apricots, prunes, figs, finely chop, raisins can be left whole. Grate the chocolate on a fine grater. Put the saucepan on low heat, put in it butter, grated chocolate, soda and sugar, dried fruits. When everything starts to melt, add the cottage cheese, cook, stirring constantly, until the cottage cheese is completely dissolved. The mass can be either liquid or quite thick. Pour the liquid cheese into the containers, smooth out the thick mass with a spatula so that you get a layer about 2 cm high, and put it in the refrigerator for several hours.
Cheese, cooked in a water bath with mushrooms
You will need:

- Champignons - 100 gr.
