When all the products acquire a golden color and begin to exude a characteristic aroma, remove the frying pan from the stove and cover with a lid. Now pay attention to making the dough. We offer a recipe whose main ingredient is kefir, but if you don’t have it, you can replace it with yogurt or whey. Mix the dairy product with an egg, regular vinegar, and corn oil. Beat the mixture well with a whisk. Then add flour and soda. Stir constantly, make the dough. Then place it on the work surface, and to prevent it from sticking, sprinkle the table with flour. Divide the mass into four parts and form a sausage from each, which is cut into thick rings. Roll these rings into thin circles and fill them with meat fried with onions; by pinching their edges with your fingers, you will get vareniki. The products can either be simply boiled in salted water or steamed - whichever you prefer. Before serving, take the vareniki out with a slotted spoon and place them in a large plate along with a piece of butter. If desired, add sour cream and sprinkle with fresh (or frozen) herbs.   • cold water - one and a half cups
  • the same amount of sugar
  • table salt - one teaspoon
  • two eggs
  • vegetable oil - four tablespoons

For the filling:

  • boiled beef - one kilogram
  • 400 grams of onions
  • one head of garlic
  • 100 grams of vegetable oil
  • Freshly ground pepper and salt - according to your taste
  • fresh herbs on request

For frying:

  • olive oil
  • a little table salt
  • four large bulbs

Method of preparation:Put the beef to boil in water with a little salt. Meanwhile, work on the dough. To do this, beat the eggs with sugar and salt in a separate bowl, pour the resulting mixture into a deep bowl with the above amount of warm boiled water and mix everything thoroughly. Now gradually add the flour, pour it in little by little, otherwise you will suffer for a long time later to get rid of the lumps. Lastly, pour the vegetable oil into the finished mass. Knead it with your hands until it becomes moderately elastic. Sometimes, even if you follow the recipe exactly, it is difficult to achieve the desired density of the dough, so add flour, as they say, by eye, until the mass becomes pliable and the way you need it. Remember, when you press with your finger, it should return to its previous state. To prevent the dough from becoming weathered and dry, cover it with a clean towel and set it aside for a while. Mince the boiled and cooled beef in a meat grinder. Then cut the onion into small cubes and fry it in a frying pan for a couple of minutes, of course, poured with any vegetable oil. Put the meat ingredients here and, stirring constantly, cook until the products acquire a slightly golden hue. Salt and pepper to your taste, sprinkle with finely chopped herbs if desired and add crushed garlic. If you are not an avid vegetarian and love meat, you can also use this filling recipe: fry the same amount of pork and beef (that is, 50 to 50) in olive oil with onions. If your filling is ready, it means it's time to make the dumplings. Sprinkle flour on the kitchen table and lay out the dough, then roll it out and cut out circles using a regular glass or a small mug. Then put one or one and a half spoons of beef in the middle of each of them and form dumplings, pinching them along the edges. Put the water on, and when it starts to boil, throw the dumplings and some salt into it. After five or six minutes, having tasted the dumplings beforehand, take them out with a slotted spoon and put them in a large plate.   • water - half a cup
  • three egg whites
  • half a glass of pasteurized milk
  • wheat flour - six tablespoons (without a slide) spoons
  • salt put in your own discretion

Filling:

  • 200 grams of pork liver
  • as much boiled beef
  • one large bulb
  • vegetable oil
  • for your taste, table salt
  • Black pepper, as well as lemon juice - if desired

Method of preparation:Break the egg and separate the yolks from the whites, then mix the latter with lukewarm water, which you dilute with pasteurized milk beforehand. Salt to taste and mix everything well. Then sift the flour with a sieve and add small handfuls to the prepared milk mixture. If you pour everything in one go, lumps will form, which will not be so easy to get rid of. Knead the dough with your hands into a dense but elastic mass and, covering it with gauze or a clean kitchen towel, leave for half an hour. Grind the pre-boiled beef in a meat grinder, you can use a blender for this. Now cut the fresh liver into large pieces and put it in a saucepan with water that is already starting to boil. Add table salt and peppercorns to the broth, cook for about thirty minutes. Then cool and grind in a food processor, mixing with beef. Cut the onion into small cubes and fry in vegetable oil on all sides, then put the meat filling in the same pan. You can add a little salt (the main thing is not to overdo it), and also squeeze some lemon juice into it. Stir well and regularly, fry the ingredients until they change color and acquire a noticeable smell of cooked food. This recipe for the filling will appeal to all meat lovers. To prevent the dough from sticking to the table, pour a few handfuls of flour on it, put the resulting mass and roll it into a thin layer, then, turning a glass or cup upside down, cut out circles. Now fill each with meat and liver and press firmly with your fingers along the edges. This time we suggest making steamed dumplings. To do this, heat water in a saucepan covered with a thick piece of gauze, and when it boils, place your creations at a sufficient distance from each other, cover with a bowl or lid.
