The combination of meat or poultry with vegetables has long beenis considered to be the most successful both in terms of taste and health benefits. By the way, this combination is present in almost all national recipes. And in Russian cuisine, meat with vegetables was traditionally cooked in the oven. We offer you several recipes based on Russian cuisine. So, today on our table is chicken with vegetables in the oven.
Chicken in the oven in a rustic way
This recipe can probably be called the simplest. No special tricks, no unusual ingredients. Everything is extremely simple and quick. And most importantly, it is also very tasty! Ingredients:
- 1 chicken carcass;
- 3 eggplants;
- 2 onions;
- 5 fresh tomatoes;
- 4 pods of bell pepper;
- 5 potatoes;
- 4 tablespoons of mayonnaise;
- 5 tablespoons of vegetable oil;
- Spices and salt at your own discretion.
Preparation:Wash the chicken, dry it with a paper towel and cut it into portions. Peel and wash the vegetables (do not peel the eggplants!). Now cut all the vegetables into slices of approximately the same size, and cut the onion into half rings. Put the chicken pieces and chopped vegetables in a large bowl and season with spices and salt. You can use any spices you like. But be careful with them - spices can interrupt the taste and aroma of vegetables and meat. Add vegetable oil and mayonnaise to the bowl, mix everything well and leave for about fifteen minutes. In the meantime, we need to preheat the oven to 200-220 degrees. When the oven is heated, put the chicken with vegetables in a baking dish and put it in the oven. In about an hour, our juicy, tasty and aromatic dish will be ready. It can be served hot or cold. When serving, you can also season it with fresh herbs.
Chicken with vegetables, baked in a sleeve
The baking sleeve can be considered one ofgreat culinary inventions. This device greatly simplifies the cooking process, allows you to completely preserve the juice of the products used, and also protects the oven from splashes of fat. So you can cook chicken with vegetables in a sleeve. Ingredients:
- 1 hen of medium size;
- 1 kilogram of potatoes;
- 2-3 carrots;
- 2 small zucchini;
- 1 pod of bell pepper;
- 1 head of garlic;
- One and a half cup of sour cream;
- Salt and black ground pepper on your own.
Preparation: We will bake the chicken whole.Therefore, wash the carcass thoroughly and let it dry thoroughly. Turn on the oven, which should heat up to 220 degrees. While the oven is heating, prepare the vegetables for the side dish and the sauce for the chicken. Peel the garlic, pass it through a garlic press and mix with sour cream, ground black pepper and salt. Pour some of the sauce for the vegetables, and rub the bird with the rest inside and out. Leave the chicken to marinate for fifteen to twenty minutes. Peel the vegetables, wash them and cut them into relatively large pieces. Tie a strong knot on one side of the baking sleeve and put half of the vegetables mixed with the sauce in it. Now place the chicken in the sleeve and put in the remaining vegetables (also mixed with garlic sauce). Next, you need to release excess air from the sleeve and tie it on the cut side with a knot or fasten it with a special clamp. That's all. Place the wrapped bird on a baking tray or in a baking dish and put it in the oven. In about an hour, our dish will be ready. You can determine the readiness of the meat by piercing the carcass with a sharp knife. If clear juice comes out at the puncture site, then the bird is ready. By the way, if you want not just a baked chicken, but also a browned one, then about fifteen minutes before the end of cooking, you just need to cut the sleeve and unfold it. Leaving the chicken in the oven open, you will get a bird with a brown crust.
Chicken legs with vegetables
Another option for cooking chicken in the oven.This time we will not use the whole carcass, but only the drumsticks (sold in sets). And we will not make any sauce - we will enjoy the natural taste of the bird and vegetables. Ingredients:
- About a kilogram of chicken legs;
- 1 pod of red bell pepper;
- 1 pod of yellow bell pepper;
- 2 heads of onions;
- 4-6 cherry tomatoes;
- 2 large ripe tomatoes;
- 3 garlic cloves;
- 2-3 sprigs of rosemary;
- 1-2 tablespoons of vegetable oil;
- Salt on your own.
Preparation:Wash the drumsticks, dry them and fry them in a frying pan with vegetable oil. Note that the drumsticks only need to be fried until golden brown, not cooked through. Therefore, they need to be placed in the frying pan so that the drumsticks do not touch each other, do not add salt and fry over high heat. Place the fried drumsticks in a deep baking dish. Turn on the oven and leave it to heat up to 200-220 degrees. Meanwhile, clean, wash and chop the vegetables. Cut the onion into half rings, the pepper into strips and squares, and the large tomatoes into cubes. In the frying pan where the chicken legs were fried, first fry the onion until golden brown. Then add the pepper and tomatoes cut into squares, reduce the heat and simmer the vegetables for about five minutes. At the very end, put crushed rosemary and chopped garlic in the pan, add salt and remove the vegetables from the heat. Place the stewed vegetables on top of the chicken legs. Decorate it all with whole cherry tomatoes and strips of bell pepper, and then put the pan in the oven. Bake everything for about 15-20 minutes. Serve as a separate dish or with a side dish: boiled or mashed potatoes, rice, spaghetti.
Chicken with potatoes and vegetable garnish
Basically, it's a regular roast. We'll just bake it on an open baking sheet. Ingredients:
- Chicken meat;
- 1 kg of potatoes;
- 2 small zucchini;
- 1 head of onions;
- 3 ripe fresh tomatoes;
- Half a cup of mayonnaise;
- Half a glass of sour cream;
- Half a teaspoon of mustard;
- Salt and spices are at your discretion.
Preparation:Wash the potatoes thoroughly and boil them in their skins. Then peel and cut the potatoes into circles. Wash the chicken carcass, dry it and cut it into portions. Peel the onion and cut it into half rings. Now mix the meat with the onion and mayonnaise, add salt, season with spices and put it in the refrigerator for about an hour. Meanwhile, cut the zucchini and tomatoes into circles and fry them alternately in a frying pan with vegetable oil. Grind the sour cream with mustard, add a little salt and, if necessary, dilute with warm boiled water - the baking sauce should be liquid. Turn on the oven and heat it up to 180 degrees. Now lay out all the prepared products on a baking sheet, alternating layers:
- potato slices,
- cut courgettes:
- circles of tomatoes;
- chicken with onions.
Pour sour cream and mustard sauce over everything and put the dish in the oven. Bake for one hour. During this time, the dish will be ready and the chicken will become golden.
Chicken with mushrooms and vegetables baked in foil
Another interesting option for cooking chicken with vegetables and mushrooms. Ingredients:
- 0.5 kg of chicken fillet;
- 2 carrots;
- 2 garlic cloves;
- 100 g fresh mushrooms;
- 2 handfuls of cauliflower inflorescences;
- 2 handfuls of broccoli inflorescences;
- 1 tablespoon of starch;
- 1 teaspoon of sugar;
- Vegetable oil;
- Salt and black pepper.
Preparation:Cut the chicken into small pieces. Wash and chop the carrots and mushrooms: grate the carrots, cut the mushrooms into small pieces. Press the garlic through a garlic press. Now roll the chicken fillet pieces in starch, put them in a deep bowl, add the carrots, garlic, mushrooms and cabbage. Add sugar, salt and black pepper, mix and put in the refrigerator for about an hour. After that, turn on the oven, which should heat up to 200-220 degrees. Lay out the foil on a baking sheet and first put the vegetable mixture on top, and put the chicken fillet on top. Wrap the foil tightly so that the juice from the meat and vegetables does not leak out, and put the baking sheet in the oven. Bake for about thirty to forty minutes. That's it! Our aromatic, juicy and very tasty dish is ready! As you can see, it is quite easy to bake chicken in the oven with vegetables. And this can be done in different ways.
