The history of the creation of "Caesar" is as follows:The delivery of products to Cardini's restaurant was late and, in order not to disappoint the customers, he decided to whip up a quick dish using the ingredients he had on hand. Among them were romaine lettuce, garlic, croutons, parmesan, olive oil, eggs, and Worcestershire sauce. The customers were more than pleasantly surprised by this combination of products and greeted the new dish with enthusiasm. Soon, the Caesar became a hit, and people began to come from all over the country just to try the new salad. By the way, the original name was "Caesar Salad", not "Caesar Salad". The spread of the Caesar salad in Europe is associated with Mrs. Wallis Warfield Simpson, who was the mistress and, eventually, the wife of Prince Edward VIII of Wales. Simpson often visited Cardini's restaurant when she was in Tijuana, and during her travels, she began instructing other chefs on how to make a Caesar. Original salad recipe

Ingredients:

  • 1 head of romaine lettuce,
  • 1 egg,
  • 3 tbsp. l. red wine vinegar,
  • 2 large cloves of garlic,
  • 3 tbsp. l. olive oil,
  • 1 lemon,
  • 1 tsp. Worcestershire sauce,
  • 1/4 tbsp. l. ground mustard,
  • 1/2 tbsp. grated parmesan cheese,
  • 150-200 g toast,
  • 50 g anchovies fillets,
  • salt, pepper to taste.

Cooking instructions:

  • Wash the romaine carefully and wrap it in a paper towel so that it absorbs moisture. Then put in the refrigerator for at least 1 hour or more.
  • In a bowl, pour olive oil, wine vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Stir thoroughly.
  • Heat the water to a boil, throw a raw egg and let stand for 1 minute. Then take the egg out of the water and let it cool. After cooling, add the egg to the sauce and whisk together.
  • Mash the desired number of anchovies and add them to the dressing. If desired, leave some for the garnish.
  • Place the ripped romaine leaves in a large cup. Pour the dressing from above and mix lightly. Add grated Parmesan, garlic toast and freshly ground pepper, mix. Serve the dish immediately!

    Recipe for Caesar salad with smoked chicken

    Ingredients: For croutons:

    • 100 g of bread, cut into cubes of 2.5 cm,
    • olive oil,
    • salt and freshly ground black pepper.

    For the sauce:

    • 1 egg yolk,
    • ½ lemon (juice only),
    • 50 ml cream,
    • 50 ml of unsweetened yogurt or sour cream,
    • 2 tbsp. l. chopped anchovies,
    • 25 g of Parmesan (grated),
    • salt and freshly ground black pepper.

    For the salad:

    • 1 romaine lettuce (sliced ​​or torn by hand),
    • 100-150 g of smoked chicken (grind),
    • 25 g of Parmesan (grated),
    • 1 tsp. chopped mint,
    • salt and freshly ground black pepper.

    Method of preparation:

  • To make croutons, in a large bowlmix bread and butter until completely absorbed and sprinkle well with salt and freshly ground black pepper. Fry the bread cubes until golden brown and crispy, then put on a kitchen towel to excess oil glass.
  • To make the sauce, in a large bowl, whisk together all the ingredients of the dressing, then season with salt and freshly ground black pepper.
  • Stir romaine and smoked chicken with the sauce, then put into a large dish.
  • Top with parmesan cheese, croutons and mint, season with salt and freshly ground black pepper to taste.
