Let's talk about soups.In various national cuisines, this dish takes its own, strictly defined place. So, in Western Europe, soups are certainly prepared, but they do not occupy such an honorable place in the table of ranks as in Slavic cuisines, in Russian in particular. Perhaps the harsh climate, long cold winters are to blame, but hot soup in our latitudes is food number one. In most families, when asked whether it is necessary to eat soup every day, you will be answered in the affirmative. And if we are talking about children, the question is not discussed at all. And adults often cannot imagine lunch without a hot first course. What is so good about soups that we eat them every day, and at the same time they do not get boring at all? This is a very grateful dish, if I may say so: replace one ingredient with another - and get a completely new dish. So they can be cooked often and not repeat themselves. And since our task is to make recipes usable not only by housewives who have the opportunity to spend a lot of time preparing culinary delights, but also by working, busy women, below you will find simple soups for every day. Their preparation does not require much time or money, they are healthy and mostly low-calorie. In short, we are going to cook soup.
Broccoli soup with biscuits
Products:
- 300-400 grams of broccoli
- 1 onion,
- 1 carrot,
- leeks (optional)
- 2-3 potatoes,
- some white roots,
- bay leaves, black pepper and sweet peas, any spices that you like
- olive oil
- salt, pepper to taste
- lemon juice
- sour cream, greens for decoration, garlic
- several slices of a loaf, baguette (any white bread).
Method of preparation:Peel and chop the onion, carrot, leek and roots. Pour olive oil into a thick-bottomed saucepan, add bay leaves and any spices you prefer, and quickly fry. Then add the onion, carrot, leek and roots and continue to sauté. When the vegetables are browned, pour in boiling vegetable broth and bring the contents of the saucepan to a boil. Add the chopped potatoes and continue to cook the soup over low heat. Finally, add the broccoli, broken into florets, add salt to taste, a little lemon juice and let it simmer for about 10 minutes. Transfer the vegetables to a blender and beat until smooth, dilute with broth to the desired consistency. Pour into bowls, put a spoonful of sour cream in each, drizzle with olive oil, garnish with a leaf of parsley or a sprig of dill, sprinkle with croutons. Croutons: Cut white bread into cubes and dry in a frying pan, previously greased with a cut clove of garlic. Notes to the recipe:
- The recipe uses vegetable broth. This is not a prerequisite. It is perfectly acceptable to simply pour the prepared vegetables with boiling water. Of course, the broth is tastier. Below is the recipe for its preparation.
- By the same principle, you can prepare and other soups-mashed potatoes: from pumpkin, squash, cauliflower. Ingredients can be varied to your liking.
How to make vegetable broth: We will need:
- 1-2 onions
- 2-3 carrots
- several white roots (parsley, celery, parsnip)
- leek
- bay leaf, black pepper and fragrant, other spices
Wash, peel and cut the vegetables sufficientlyin large pieces, it is better not to peel the onion. Pour cold water and cook over low heat until the vegetables become soft. Use for making various soups, porridges, risotto. The broth can be frozen in small portions and then used as needed. Very convenient for working women.
Soup with champignons and oatmeal
Products:
- 300-400 grams of champignons (you can use any other mushrooms: oyster mushrooms, white, oily, shiitake)
- 1 onion
- 1-2 carrots
- 3-4 potatoes
- 3-4 tablespoons oatmeal (or oat flakes)
- olive oil
- processed cheese
- spicy roots
- salt, pepper, bay leaves
- greenery
Method of preparation:Wash, clean and slice the mushrooms. Place them in a dry, heated frying pan and fry, stirring constantly until all the liquid released by the mushrooms has evaporated. Drizzle the mushrooms with olive oil, add some chopped onion and grated carrot, fry everything together, add salt, pepper and leave under the lid. Pour a couple of tablespoons of olive oil into a saucepan with a thick bottom, throw in a bay leaf, pepper and other spices, lightly fry, add onion and carrot. Add chopped and peeled potatoes to the sautéed vegetables and pour boiling water (or vegetable broth) over all this beauty. About 10 minutes after the soup boils, add the prepared mushrooms and oatmeal. Just before the end, add finely grated processed cheese to the soup and cook for 2-3 minutes until it is completely dissolved. Salt to taste. Sprinkle with chopped herbs before serving. Recipe notes:
- Frying mushrooms in a dry frying pan helps to preserve the mushroom taste and smell.
- To this soup you can serve croutons with cheese and onions.
How to make croutons:Grate any hard cheese, finely chop the onion. Mix everything. Cut the baguette, lightly grease with oil, add a few drops of hot sauce (for example, satsibeli), put the cheese and onion on top. Bake in the oven until golden brown. Soups are low-calorie food, and there are also soups that simply promote weight loss. After sitting on such a soup diet for a week or two, you can lose weight quite well.
Soup for weight loss №1
We will need:
- 400 grams of white cabbage
- 2 large onions
- celery (root, petiolate, in the summer you can add fresh greens of celery)
- 3-4 tomatoes (in winter you can use tomatoes, canned in their own juice)
- 3 Bulgarian peppers (green)
- spices that you prefer
Method of preparation:Peel the vegetables, cut them, put them in a saucepan and cover with water. Bring to a boil, simmer for 15-20 minutes over low heat until the vegetables in the soup reach the softness you like. It is better to eat it without salt, you can add a little soy sauce. You should eat the soup every day, the more the better. In addition to soup, you can eat:
- 1st day - any fruit except bananas
- Day 2 - vegetables (except corn and legumes), for dinner you can eat baked potatoes with butter
- Day 3 - fruits and vegetables
- Day 4 - fruits, vegetables, including bananas, a glass of low-fat milk
- 5th day - 300-400 grams of boiled or grilled beef (can be replaced with chicken or turkey breast) and 2-3 tomatoes
- 6th day - beef (or chicken / turkey), vegetables, lettuce from leafy greens
- 7th day - boiled brown rice, vegetables, juice (no added sugar)
Notes:This soup has a strong diuretic effect, in other words, it removes excess fluid from the body. If you strictly follow the recommendations, then in a week of such a diet you can get rid of 3-5 kilograms.
Soup for weight loss №2
We will need:
- 150 grams of onions
- 100 grams of green onions
- 150-200 grams of carrot
- 400 grams of white cabbage and 300 grams of colored
- 250 grams of tomatoes
- 150 grams of celery
- olive oil
- curry, garlic, cumin, coriander, ginger (optional)
- bay leaf, hot pepper (fresh or dried)
How to cook:Chop the onions and green onions and lightly fry in olive oil, add a tablespoon of curry and the same amount of crushed cumin and finely chopped garlic. Simmer for a while. Add chopped carrots and celery, cabbage (white and cauliflower), tomatoes, mix and pour water over all the vegetables. At the end, add chopped coriander, bay leaf, pepper, ginger, chopped greens. The additional nutrition scheme is the same as in the first option.
Dietary fish soup
Products:
- fish fillet - 300 grams
- 2 juicy bulbs
- half a glass of dry white wine
- olive oil
- 3 tomatoes (can canned in its own juice)
- salt, pepper, bay leaves
- tea spoon of starch
- green onion
- grated cheese
Method of preparation:Peel and finely chop the onion. Pour oil into a saucepan and fry the onion. Add wine, salt, pepper, bay leaf and fish fillet and simmer everything together. Pour in the fish broth (cook it from the head, tail and bones with the addition of spices and roots), put in the chopped tomatoes and bring to a boil. Dissolve the starch in wine and pour into the finished soup. Sprinkle with grated cheese and green onions before serving. Make your soup every day and enjoy both the food and the cooking.
