Eggplant rolls with garlic
Ingredients:
- 2 eggplants
- 2 tomatoes
- 3 cloves of garlic
- 3 tbsp. spoons of mayonnaise
- parsley, dill - to taste
- vegetable oil
- pepper, salt
Method of preparation:Wash and dry the tomatoes, eggplants and greens thoroughly. Cut the eggplants into thin strips lengthwise, about 5 mm thick, and add salt to remove excess bitterness. After half an hour, wash the eggplants, dry them and fry them in a frying pan with vegetable oil until golden brown. Place the fried eggplants on a napkin to remove excess oil. In a separate bowl, combine the garlic and greens passed through a garlic press. Add mayonnaise and mix thoroughly. Spread the resulting mass on the eggplant pieces and roll them into rolls. Wash the tomatoes, dry them and cut them into circles, which are then placed on a plate. Place the eggplant rolls with garlic on top of the tomatoes. Enjoy!
Eggplant rolls with nuts
Ingredients:
- 2 eggplants
- 100 gr. walnuts
- 1 onion
- 3 cloves of garlic
- coriander, parsley to taste
- ¼ tsp. 9% vinegar
- vegetable oil
- hops-suneli
- pepper, salt
Method of preparation:To prepare these rolls, you need to wash and dry the eggplants. Then cut into thin strips lengthwise, about 5 mm thick, and salt to remove excess bitterness. After half an hour, wash the eggplants, dry them and fry in a frying pan with vegetable oil until golden brown. Place the fried eggplants on a napkin to remove excess oil. Peel and chop the onions, then fry in a frying pan with vegetable oil. Mince the nuts. Chop the garlic with a garlic press. Finely chop the parsley and cilantro. Combine the onion, herbs, nuts and garlic in a bowl. Then add pepper, salt, hops-suneli and vinegar. Puree all the ingredients using a blender. Spread the resulting mass on the eggplant pieces and roll them into rolls. Eggplant rolls with nuts – ready! Enjoy!

Ingredients:
- 2 eggplants
- 2 tomatoes
- ½ tsp mustard
- 3 tbsp. spoons of mayonnaise
- 3 cloves of garlic
- parsley, dill - to taste
- vegetable oil
- pepper, salt

- 100 gr. brynza
- 3 cloves of garlic
- 2 tbsp. spoons of pine nuts
- vegetable oil
- 1 sprig of rosemary
- salt

Then cut into thin strips lengthwise, about 5 mm thick, and salt to remove excess bitterness. After half an hour, wash the eggplants, dry them and fry them in a frying pan, adding vegetable oil until golden brown. Place the fried eggplants on a napkin to remove excess oil. Mash the feta cheese with a fork, add chopped rosemary to it. Lightly fry the pine nuts in a frying pan, and then combine with the feta cheese and garlic. Add salt if necessary. Eggplant rolls with minced meat
Ingredients:
- 200 gr. forcemeat (any)
- 3 eggplant
- 12 pitted olives
- 3 cloves of garlic
- 5 tbsp. spoons of grated hard cheese
- 1 bunch of cilantro
- 3 tbsp. spoons of rice
- 2 tsp balsamic vinegar
- 1 tbsp. a spoonful of tomato paste
- 250 ml. white dry wine
- green onions to taste
- pepper, salt
Method of preparation:Wash and dry the eggplants. Then cut into thin strips lengthwise, about 5 mm thick, and salt to remove excess bitterness. After half an hour, wash the eggplants, dry them and fry in a frying pan with vegetable oil until golden brown. Place the fried eggplants on a napkin to remove excess oil. Boil the rice, cool and combine with minced meat, chopped onions, olives, finely chopped cilantro, grated cheese and garlic pressed through a garlic press. Mix thoroughly, pepper and salt. Grease each piece of eggplant with the resulting filling, wrap them into rolls and secure with toothpicks. Place the finished rolls in a baking dish. Mix the tomato paste, vinegar and 100 ml of water and pour the resulting sauce over the rolls. Place the form in the oven for 40 minutes. Temperature 180 degrees. Ingredients:
- 3 eggplant
- 200 gr. ham
- 200 gr. champignons
- 250 ml. sour cream
- 3 tbsp. tablespoons sesame seeds
- parsley, dill - to taste
- vegetable oil
- flour
- salt
Method of preparation:To make eggplant rolls with ham and mushrooms, wash and dry the eggplants. Then cut into thin strips lengthwise, about 5 mm thick, and salt to remove excess bitterness. After half an hour, wash the eggplants, dry them and fry them in a frying pan with vegetable oil until golden brown. Place the fried eggplants on a napkin to remove excess oil. Wash the mushrooms, dry them and then fry them in a frying pan with vegetable oil for 5-7 minutes. Finely chop the greens. Cut the ham into small cubes. Combine the mushrooms, ham, sesame seeds, greens and lightly salt in a bowl. Then add sour cream and mix thoroughly. Grease each piece of eggplant with the resulting filling and roll up.
