So the golden pancake has become a real symbol of the spring sun gaining strength. There is an incredible number of all kinds of pancake recipes, differing, as a rule, in the types of flour. Wheat and millet pancakes, semolina and buckwheat, rye, etc., but there are also sour ones. Why sour pancakes? Because they are prepared with sour milk products. Today we will tell you how to bake pancakes with kefir and sour milk.

Pancakes with milk

To make pancakes with sour milk, we will need:

  • Wheat flour - 1 cup;
  • Chicken eggs - 2 pieces;
  • Vegetable oil - 100 grams;
  • Butter - 30 grams;
  • Spoiled milk.

Preparation:Break the eggs and separate the whites from the yolks. Add the yolks to the flour and pour in the previously melted butter. If you like sweet pancakes, you can add a little sugar to the dough - about half a tablespoon and be sure to add a little salt. Rub the flour with butter and yolks well, then dilute it with sour milk. Milk should be added gradually, little by little, and to prevent the dough from forming lumps, it is necessary to rub it constantly. The finished pancake dough has the consistency of thick sour cream. Beat the egg whites into a thick foam and very carefully add to the dough, while slowly stirring it with a spoon, directing the movements from top to bottom. Pancakes should be baked in a hot frying pan, well greased with oil, until a characteristic golden hue. Many young housewives, being unaccustomed to it, cannot determine when to turn the pancake. This should be done only after bubbles appear and burst on the surface of the pancake, and the dough "sets" - stops being liquid. Ready pancakes on sour milk are served with sour cream or jam, hot tea will not be superfluous either.

Pancakes on yogurt

This recipe differs from the previous one in that we cook sour pancakes not with milk, but with sour kefir. Necessary ingredients:

  • Sour kefir - 0.5 liters;
  • Sugar - 1 tbsp;
  • Salt - 1/3 teaspoon;
  • Chicken egg - 1 piece;
  • Wheat flour - 3 cups;
  • Baking soda - 1 teaspoon;
  • Boiled water - 3/4 cup;
  • Vegetable oil - 2 tbsp.

Preparation:Beat sugar with egg and salt, add kefir and well-sifted flour. Mix the dough thoroughly, break up the formed lumps, and when it becomes like thick sour cream, add boiled water. Pour water into the center of the container with the dough, stirring gently. Add a little vegetable oil and soda, previously quenched with a drop of vinegar. Bake on a hot frying pan, without greasing it. Serve the finished pancakes on sour kefir with honey or jam.
