Pancakes are a culinary masterpiece, made by frying a thin layer of liquid dough on a hot frying pan, first on one side, and after browning - on the other. As a rule, round in shape. A Russian dish that appears on the table of every family at least once a year. Wheat flour is a must in pancake recipes. Nowadays, pancake flour has also appeared in the industry, which also includes baking soda, citric acid, dry milk, and powdered sugar. Pancakes made with it are more delicate. Pancakes are served both as a separate dish and with a filling (both sweet and salty) wrapped inside. Among the variety of recipes (which can be prepared with any dairy and fermented milk products), pancakes mixed with sour cream can be distinguished. They differ significantly from those mixed with milk or kefir, which allows us to introduce variety into the “pancake menu”. This is especially relevant on the eve of Maslenitsa. We offer you several original recipes for pancakes with sour cream. Each of the suggested recipes requires sour cream and flour, but the other ingredients may vary. Treat yourself and your loved ones to homemade pancakes.
With yogurt and soda
To prepare this recipe you will need:
- 1 tbsp. sour cream,
- 2 tbsp. kefir (in this recipe kefir can be completely or partially replaced with water),
- 1 tsp soda,
- salt,
- 2 eggs,
- sugar,
- flour (the amount varies from the density of sour cream),
- 3 tablespoons sunflower oil in dough,
- sunflower oil for lubricating a frying pan (or a piece of fat)
Preparation of the dish: Mix sour cream with milk.Add soda and stir. Air bubbles begin to appear in our mixture. Then add eggs, salt, sugar and stir everything again. Next, gradually add flour to our mixture and stir to avoid lumps. The pancake batter should be liquid in consistency, like liquid sour cream. Add sunflower oil to the resulting batter and let it sit for about 15 minutes. At this time, heat up our frying pan, grease it with lard or butter. Pour a small amount of batter into the frying pan and spread it in a thin layer over the bottom. When the bottom side of the pancake is fried and the top is free of wet spots, turn it over with a spatula and fry the other side. We recommend trying the first pancake and, if necessary, adding salt or sugar to the batter.

You can fry! Pancakes are very tasty. All pancakes, the recipes for which are described above, are thin, lacy, tender and very tasty! However, women who watch their weight should be careful about their use, because sour cream is the most caloric product of all dairy products, and pancakes themselves are not a very dietary dish. But you should not completely give them up, because sour cream stimulates mental activity, gives strength to muscles, it contains many vitamins, microelements and lactic acid bacteria, which are good for the body. But the calorie content of pancakes is still 4-6 times less than the calorie content of cakes. It should be noted that pancakes can also fit into a diet. To reduce fat content, you should minimize the amount of fat when cooking. This can be achieved by taking fermented milk products with a lower percentage of fat and using less oil than given in the recipe (if you fry in a frying pan with a non-stick coating, then you can minimize oil consumption as much as possible). And do not forget that there are fewer calories in lacy thin pancakes. And if you stuff them with red fish (it has a lot of omega-3 fatty acids) or stewed vegetables (to make it tasty, vegetables must be finely chopped and seasoned with sauce), it will be doubly tasty and healthy! The main rule is not to overeat and not to eat at night! Although from time to time you can cross this rule - who to pamper if not yourself? So bake, eat and enjoy! Bon appetit!
