Agree that the combination of the sweet taste of this "New Year's fruit" with chicken is quite unusual, if not extravagant. And meanwhile, such a salad is made! And in various variations. Salad with chicken, orange and vegetables

Cooking time: 40 minutes. For 4 servings you will need the following ingredients:

  • boiled chicken fillet (200-300 g)
  • a small head of Peking cabbage (400 g)
  • 2 oranges
  • 1 pod of red sweet pepper
  • 100 g of olives
  • 1 large onion

For the sauce:

  • 2 cloves of garlic
  • 1 tsp coriander seeds
  • 6 tbsp. spoons of vegetable oil
  • 5 tbsp. spoons of wine vinegar
  • 1 teaspoon of sugar
  • salt

Preparation:Cut the boiled chicken into strips. Shred the cabbage. Peel the oranges, divide into segments, remove the transparent films from the segments. Cut the sweet pepper in half, remove the stalk and core, wash the pod, dry and cut into thin strips. Drain the marinade from the olives and, if desired, cut in half or cut into circles. Cut the onion into half rings. Mix all the ingredients and put in a salad bowl. For the sauce, peel the garlic cloves and crush in a mortar together with the coriander seeds. Salad with chicken, orange and apple

Another version of chicken and orange salad. To prepare it, you will need the following ingredients:

  • chicken breast
  • 1 orange
  • 1 apple
  • 1 cucumber
  • 4 tbsp. l. hard cheese
  • salt
  • unsweetened yogurt for refueling

Preparation:Boil the chicken fillet in salted water, cool and cut into strips. Peel the orange, remove the white fibers. Cut it into thin slices. Grate the cheese (preferably salty and spicy) on a coarse grater. Wash the apple, peel it and remove the hard core. Cut the apple into long strips. Wash the cucumber and cut it into strips or half-circles. Place all the prepared ingredients except the cheese in a salad bowl, season with yogurt and sprinkle with cheese. Note: You can use low-fat sour cream or kefir instead of yogurt.

Salad with chicken, orange and avocado

This dessert version of chicken salad with orange has an exquisite taste and an equally exquisite set of products. Ingredients:

  • leaves of green salad
  • red onion
  • avocado (1 pc)
  • smoked chicken breast
  • oranges (3 pieces)
  • grains of red garnet

For the sauce:

  • lemon
  • orange
  • honey (1 tsp)
  • mustard (1 tsp)
  • vegetable oil (2 tbsp.)
  • clove of garlic
  • white pepper

Preparation:Tear the green salad into small pieces with your hands and place in a salad bowl. Cut the chicken into cubes. Peel and core the oranges and cut them into slices. Peel, cut and pit the avocado. Chop the pulp and sprinkle with lemon juice. Chop the onion into very thin half rings. Mix all the ingredients except the lettuce leaves and season with the sauce. For the sauce, squeeze the juice of the lemon and orange, mix it with honey, mustard and crushed garlic, season with pepper (preferably freshly ground) and salt. Salad with chicken, oranges and nuts

Ingredients:

  • chicken leg
  • orange
  • walnuts
  • salt
  • mayonnaise

Preparation:Boil the leg, cool it and separate the meat from the bones. Cut the fillet into small cubes and separate the peeled orange into slices. Grind the nuts (about half a glass). Mix all the ingredients, add salt and season with mayonnaise. Note: The amount of nuts can be varied to your taste, and instead of walnuts, use fried almonds. In general, you can put any nuts in chicken and orange salads: almonds, hazelnuts, pine nuts and even seeds. And also add croutons or hard fruits to them: pear, apple, quince.
