Simple recipe of caviar with mayonnaise
Ingredients:
- zucchini — 6 kg,
- onions - 1 kg,
- tomatoes - 1 kg,
- carrots - 0.5 kg,
- vegetable oil - 1 cup,
- sugar — 4 tbsp. l.,
- salt - 2 tbsp.,
- 4 tbsp. l. 70% vinegar,
- mayonnaise - 500 ml,
- ground pepper to taste.
Put the onion and carrot through a meat grinder, thenfry. Fry everything separately until golden brown. Grind the zucchini and mix with the fried onions and carrots. Put it all on the fire and cook for 2 hours, stirring constantly with a wooden spoon. Cook the caviar in a saucepan with a thick bottom or in a cauldron. Pass the peeled tomatoes through a meat grinder, add to the saucepan with the rest of the vegetables. Pour in the vegetable oil, add sugar, salt and vinegar. Cook for another 1 hour, then add mayonnaise and pepper, cook for another 20 minutes. Transfer to jars and roll up, cover overnight, put the jars upside down with the lids. In this recipe, we used carrots, it is rich in carotene and gives the caviar a sweetish taste.
Cabbage caviar with mayonnaise and tomato paste
Ingredients:
- Young zucchini - 6 pcs.,
- onions - 1 kg,
- tomato paste -350 g,
- salt -3 tbsp. l.,
- sugar - 200 g,
- 200 ml of 9% vinegar,
- mayonnaise - 250 g,
- 2 heads of garlic,
- Ground pepper - 1 tsp.
Grind the zucchini in a meat grinder.Also mince the onion, mix with the zucchini, put in a deep saucepan or cauldron. Add salt, sugar, vinegar and vegetable oil. Mix, add tomato paste, put on medium heat for 2 hours, stirring occasionally with a wooden spoon. Press the garlic, add to the caviar. Add black pepper and mayonnaise and cook for 30 minutes. Then put in jars and roll up.

Ingredients:
- zucchini — 1 piece,
- onion - 1 pc.,
- black bread - 3 slices,
- mayonnaise — 50 gr,
- vegetable oil,
- Apple vinegar,
- ground pepper,
- salt to taste.
Wash the zucchini and boil it in its skin for 15 minutes,so that its skin becomes soft. Cool it, then peel it and cut it lengthwise into two parts. Put black bread without crust into the slices of cut zucchini. Then fold both zucchini slices to make a "sandwich" and put it under a weight. When the zucchini bread has absorbed the moisture, cut the "sandwich" and mince it with one onion. Season this mass with salt, pepper, vegetable oil, mayonnaise, vinegar or lemon juice. Put the resulting zucchini caviar in the refrigerator. This recipe is not suitable for winter preparations, such zucchini caviar is consumed cold, and is not stored for a long time. In order for your dish to be of high quality, you should use mayonnaise without preservatives, artificial flavors and additives.
