Remember that the dough should be very steep, so you can add flour if necessary. The steeper the dough, the tastier the homemade noodles will be. Wrap the finished dough in cling film and leave for about half an hour. After that, put it back on a floured table and roll it out into a thin layer. Again, the thinner the layer of dough, the better the noodles will be. To prevent the dough from sticking to the table, you need to turn the layer while rolling it out. Now it's time to make the noodles. It's best to use a special rolling knife (a pizza knife will do), but you can also cut the noodles with a regular knife. It doesn't really matter whether you cut the dough into short or long strips. It's much more important that the strips are narrow. Although you can also make wide noodles. So, cut the dough into strips of the same width, put them on a cutting board sprinkled with flour and leave to dry. Another way to cut the noodles is as follows. First, cut the dough rolled into a layer into strips about twenty centimeters wide, then roll them into rolls (along the length of the strip) and start making the noodles.
