This soup can be found in this countrypeasants' menu, since its preparation does not require much effort and exquisite, expensive products. It can also be prepared at home, it will not be difficult. The classic recipe for gazpacho soup came to us in Russia from Spain. Gazpacho comes in different types, for example:

A simple recipe for gazpacho soup
To prepare this dish we will need:
- tomato juice (3 items);
- tomatoes (450 g);
- cucumber (1 piece of medium size);
- onions (1 head);
- pepper (1 pc.);
- coriander (cilantro) - 0.5 cup;
- sauce Tabasco (at your own discretion);
- olive little (0.2 cent.);
- wine red vinegar (0.3 tbsp.).
So, the first stage of preparation isto grind tomatoes, cucumber and onion to a puree. To do this, you need to use a food processor or you can do it manually using a fine grater. Move the resulting mixture to a deep plate. The second stage is adding the necessary spices (cilantro, vinegar, Tabasco), tomato juice and oil to the soup. After that, the entire resulting consistency needs to be mixed. The third, final stage of preparation is the decoration of the dish. To do this, tomatoes (without seeds), cucumbers and onions need to be cut into cubes and put into the soup. Then add salt and pepper to taste and place the resulting mixture in the refrigerator to cool. That's it, the soup is ready to eat - bon appetit. Soup in a Country Style
Ingredients required:
- tomato juice (2 items);
- tomatoes (450 g);
- Bulgarian red pepper (2 pcs large);
- English cucumbers (450 g);
- red onions (1 head);
- sauce tabasco (0.2 cent.);
- olive oil (0.3 tbsp.);
- wine red vinegar (0.2 tbsp.);
- salt;
- ground black pepper.
The preparation of this dish consists of onlytwo stages. The first stage is slicing cucumbers, tomatoes, peppers, onions (preferably very finely) and adding juice, vinegar, oil, Tabasco, salt and pepper (all spices are added to your own taste). The resulting consistency must be thoroughly mixed. And the second stage is to grind the resulting mixture to a puree state with a blender. We move the resulting consistency into a deep bowl and send it to cool. That's all, the recipe is ready to eat. The use of pepper in this dish gives it a certain zest. It turns out very tasty.
Fresh gazpacho
Necessary products:
- tomatoes (5 pcs.);
- cucumbers (half of the whole average cucumber size);
- fresh peppers (yellow and red);
- zucchini;
- onions (0.2 heads);
- garlic (3 cloves);
- pepper cayenne (0.2 tsp);
- parsley;
- olive oil (100 ml);
- balsamic vinegar (3 tbsp.)
When preparing this recipe, you will spend about30 minutes of your time. First, you need to cut the tomatoes, peppers, cucumber, garlic and onion into small cubes and mix them in a deep plate. Mix the resulting mixture thoroughly. In a separate bowl, mix the oil, pepper, parsley and vinegar. Let it sit for a while (about 10 minutes) and pour the resulting sauce over the vegetables. Following the instructions for using the blender, place the maximum amount in it and bring the consistency to a puree state. Then move the resulting mixture to the same plate. There should be a small amount of vegetables and sauce left in it - this will be the decoration of the dish. The puree also needs to be sprinkled with parsley, and do not forget to cool the soup before eating. The strawberry gazpacho recipe will decorate the festive table in the summer, and will also replace ordinary, standard desserts.
Strawberry gazpacho
products required for use:
- Strawberry (1.5 kg);
- Nectarines (2 pieces);
- passion fruit (3 pcs.);
- raspberry (300 g);
- fresh mint (6 pcs.);
- sugar (100 g);
- white dry wine (130 ml).
Method of preparation:First, you need to process the strawberries, that is, wash them and remove the stems. Leave 200-300 g for garnishing the dish. The rest of the strawberries need to be crushed to a puree and mixed with sugar. Next, using a colander or sieve, strain the resulting puree. For this procedure, you can use regular gauze folded two or three times. After filtering, you need to add wine to the puree and mix the resulting mixture. All that remains is to decorate. To do this, cut the passion fruit in half and add only the seeds to the puree. Finely chop the set aside 200-300 g of strawberries and nectarines (using a blender or food processor is encouraged). Then add raspberries to the mixture and leave in the refrigerator to cool. Before serving, garnish the puree with mint leaves.
