Beetroot with feta cheesePhoto:“Antenna-Telesem”Cooking time: 20 minutesFor 2 servings: 1 boiled beetroot, 1 tbsp. wine vinegar, 100 g soft feta cheese, 1 tbsp. sour cream, 1 tsp. mustard, freshly ground black pepper - to taste, 3-4 lettuce leaves, 2 tbsp. olive oilPeel the beetroot and cut into circles. Arrange in one layer on a wide plate and sprinkle with vinegar. Grind the feta cheese with sour cream and mustard into a homogeneous paste. Season with pepper. Stack the lettuce leaves and cut into strips. Place the prepared feta cheese on each beet circle with a teaspoon. Sprinkle with chopped lettuce and drizzle with olive oil. By the way: this dish is best served with a crispy baguette.
Raklet with seafood
Cooking time: 20 minutesFor 2 servings:200 g seafood, 50 g salmon, 1 tbsp lemon juice, salt, white pepper, 1 small onion, 20 g butter, 1 tbsp chopped parsley, 4 tbsp fish broth, 2 tbsp dry white wine, 1 tbsp sour cream, 80 g mozzarella cheese. Cut the fish into small cubes. Place the seafood in a bowl with the fish and season with salt, pepper and lemon juice. Finely chop the onion and sauté in butter. Pour in the broth and wine, bring to the boil. Add sour cream, salt and pepper. Grease the raclette pans with butter, sprinkle with finely chopped parsley. We put seafood and fish in them, cover with slices of mozzarella, pour sauce and bake under the grill until golden brown. By the way: if there is no grill, the dish can be cooked in an oven preheated to 200 degrees in a baking dish.
Chicken with Vegetables in Chinese
Chicken with vegetablesPhoto:“Antenna-Telesem”Cooking time: 20 minutesFor 4 servings: 1 sweet pepper of different colors, 250 g chicken meat, 2 tbsp refined vegetable oil, 2 cloves of garlic, a small piece of ginger and chili pepper, 200 g frozen green beans (or peas), 1 jar (125 g) of canned pineapple, a handful of fried nuts (peanuts or cashews), salt, pepper - to taste.Wash the pepper, peel and cut into small pieces. Cut the chicken meat into strips. Peel and chop the garlic, chili and ginger. Heat a wok (or large frying pan), pour in the oil and shake from side to side so that the oil gets on the sides of the pan. First, add garlic and spices to the wok, then pepper and chicken. Stir vigorously for 2 minutes so that the ingredients don’t lie on the bottom, but are evenly fried on all sides. Add beans, nuts, pineapple pieces with 2 tbsp. syrup, salt to taste and cover with a lid. Keep on high heat for 4-5 minutes and serve. Tested: you can make another version of this dish using this recipe, replacing ginger and chili with half a teaspoon of curry.

Vegetable saladPhoto:“Antenna-Telesem”Cooking time: 20 minutesFor 2 servings: 1 red onion, 1 large carrot, 0.5 daikon, 1 clove of garlic, 2 tbsp. olive oil, 0.5 cups chicken broth, 1 tsp. balsamic vinegar, a pinch of sugar, salt, pepper - to taste.Wash, peel and chop the vegetables. Press the garlic. Heat the oil in a wide frying pan, fry the vegetables with garlic for 5 minutes, stirring occasionally. Pour in the chicken broth and balsamic vinegar. Season to taste with sugar, salt and pepper. Simmer for another 5 minutes. Remove from heat. Serve as a separate dish or as a side dish for fish or meat. Idea: instead of balsamic vinegar, you can use lemon juice and a pinch of zest.
