In 1757, the British attacked Menorca and kept the French under siege. The food was running low, but turkey eggs and olive oil remained in sufficient quantities. The chefs prepared scrambled eggs, omelettes and other variants of egg dishes, which the Duke of Richelieu was so tired of that he ordered the chefs to come up with something new. And one of the chefs just beat the eggs with olive oil, then added some salt and spices to the mixture. The Duke liked the taste of this sauce so much that they began to cook it even after the siege was lifted, and its recipe spread in France. This is how the sauce made from beaten eggs with olive oil got the name Mayon sauce. However, it can be assumed that the roots of Mayon sauce go back to more ancient times, since there have always been eggs and olive oil in the Mediterranean, and it is difficult to imagine that none of them tried mixing up french chefs. For example, long before mayonnaise, there was a recipe for the Spanish ali-oli sauce, which literally translates as garlic butter. This sauce is made from a fairly rich mixture of garlic, eggs and olive oil, and is now called aioli. Mayonnaise is considered a "noble" sauce, that is, cooked without the use of flour. Its traditional composition is quite simple: egg yolks, olive oil, lemon juice, salt, sugar and spices. The Provencal variety also contains mustard. But it's not about the composition, but rather the correct actions during the cooking process. There should be no air bubbles in real mayonnaise, so use of a mixer is unacceptable! The correct mayonnaise is whipped only with your hands for quite some time. Mayonnaise is not just a flavoring agent. The present is very useful, first of all, because the whipped olive oil is easily digestible and provides the body with vitamins of groups A, E, F. Mayonnaise makes our diet more balanced, helping the assimilation of vegetable dishes. Homemade mayonnaise is harmless for children, which is not the case with ready-made mayonnaise from the store.
