However, it can be assumed that the roots of the sauce from Mayon go back to more ancient times, since in the Mediterranean there have always been eggs and olive oil, and it's hard to imagine that no one did not try to mix up French chefs. For example, long before the mayonnaise, there was a recipe for the Spanish sauce ali-ol, which literally translates as garlic-oil. This sauce is prepared from a fairly rich mixture of garlic, eggs and olive oil, and now it is called aioli. Mayonnaise is considered a "noble" sauce, that is, cooked without the use of flour. Its traditional composition is quite simple: egg yolks, olive oil, lemon juice, salt, sugar and spices. The variety "Provencal" contains also mustard. But the matter is not in the composition, but rather in the right actions in the process of preparation. In the present mayonnaise, there should be no air bubbles, so it is unacceptable to use a mixer! The correct mayonnaise is whipped only with hands for a fairly long time.
