Adjika is a Megrelian and Abkhazian seasoning,consisting of spices, salt, red pepper and walnuts. Many people believe that adjika can only be red, but this is a mistaken assumption, since if green pepper was used in its preparation, it will be green. What does adjika mean? This word means salt in Arabic. In ancient times, owners gave salt to the shepherds who grazed their sheep. As a result of the fact that due to the large consumption of salt, the animals drank and ate more, and thus gained weight. The shepherds added various seasonings to the salt, thereby taking some of the salt for themselves, since in those days it was a very expensive product. The Abkhaz Adzhika
Ingredients:
- 1 kg. hot pepper
- 6 heads of garlic
- 250 gr. chopped cilantro
- 30 gr. chopped dill
- 30 gr. basil
- 100 gr. walnuts
- 1 tbsp. a spoon of coriander
- salt
Method of preparation:How to make Abkhazian adjika? To do this, remove the seeds from the red pepper and cut it into several pieces. Then put the pepper in a deep bowl, pour warm water over it and leave for a couple of hours, changing the water periodically. Thanks to this procedure, excess bitterness will be removed. After that, grind the pepper with a meat grinder or blender, do the same with the garlic and nuts. Combine all the ingredients and add seasonings to taste. - 3 kg. a tomato
- 1 kg. Bulgarian pepper
- 1 bitter pepper
- 250 gr. garlic
- 1 bunch of parsley
- 1 bunch of dill

- 3 tbsp. spoons of 9% vinegar
- salt
Method of preparation:To prepare tomato adjika, start by pitting the peppers, rinsing the tomatoes with boiling water and removing the skin. Then mince the peppers, tomatoes, garlic and greens. Method of preparation:The recipe for adjika for the winter will undoubtedly come in handy on cold winter evenings. To prepare it, you need to mince tomatoes, apples, and bell peppers, add the vegetable mass and put them in a saucepan. Put the resulting mixture on the fire and cook for 2 hours.
