We need:

  • pork fillet - 1-1.2 kg (select);
  • garlic - 1 head;
  • a mixture of peppers (black, red, fragrant);
  • coarse salt;
  • foil.

  • A large piece cut in two. Each rub with a mixture of ground peppers (sweet, black, red) and salt is best coarse. Peel the garlic, cut each lobule into narrow segments. Pierce the pork with a knife (if possible - to the full depth) and finger the meat with pieces of garlic. Thus, "arrange" the entire piece.
  • Put both pieces in a deep bowl and leave to marinate in the cold (preferably overnight).

  • Wrap each piece in foil and place both pieces on a deep pan (the edges of the foil should be on top).
  • Bake for about 2 hours at 180 ° C. After 50 minutes, carefully open the foil, arm yourself with a tablespoon and pour over the boiled pork with the juice that is released. Do this procedure again in about half an hour. 15 minutes before being ready to open the foil to form a brown crust.
  • In order to check the readiness of the baked ham, cut it with a knife: the cut should be uniformly cooked.
  • Remove the boiled pork from the oven, pour out the juice from the foil and leave to cool directly in the foil.
  • When serving on the table - cut the boiled pork into pieces, do not forget about horseradish and mustard!
