When buying frozen squid, please pay attentionPay attention to the color of the meat that can be seen under the outer film - it should be whitish. The skin itself can be different - its color varies from pink to purple. The squid carcasses should be easy to separate from each other - stuck together may indicate that the product has already been defrosted. The smaller the carcass, the sweeter the meat.
How to clean
The frozen squid carcass should be dousedboiling water - the film covering the meat will curl up - and it will be easy to remove with your hands. If the squid has already thawed - pour hot, but not boiling (!) water over it for 3 minutes. After that, remove the skin with your hands. From the inside, take it out and remove the transparent chitinous plates. Now the squid carcass is ready.
