Place in a bowl of ice water to make the onions crispier. Before serving, drain and dry the onions. Add a tablespoon of vinegar, a tablespoon of sesame oil, preheated in a frying pan. Season generously with sea salt, add freshly ground black pepper and red pepper.Assorted Green Salad with KumquatsIngredients: 12 green salad leaves, 1 cup kumquats, 1 tbsp l., oil with Provencal herbs, salt, freshly ground black pepper, green onions - 1 sprig, pumpkin seeds - 1 handful. Take different types of green salad, such as escarole, young mustard leaves or cabbage. Separate the leaves from the stem. Cut the kumquats into thin circles. Pack the salad and kumquats in separate plastic containers and leave in the refrigerator overnight. Then place the ingredients in a large bowl, add apple cider vinegar, pour over oil with Provencal herbs and mix thoroughly. Season with salt and freshly ground black pepper. Before serving, garnish with finely chopped green onions and fried pumpkin seeds.
